For the past 13 years, I’ve made this egg casserole mostly for Christmas brunch gatherings. It comes with sausage, bread, cheese, and eggs. Bacon also goes well with it.

Ingredients
- 12 eggs, beaten
- 1 ½ pounds ground breakfast sausage
- 16 ounces shredded Cheddar cheese, divided
- 7 slices white bread, torn into pieces
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Brown sausage in a large skillet over medium-high heat. Drain off grease, and set aside to cool. Pour the eggs into a lightly greased 9×13 inch baking dish.
- In a separate large bowl, combine the sausage, bread and 12 ounces of the cheese. Mix well and pour this into the egg mixture. Top with the remaining 4 ounces of cheese and cover with foil.
- Bake at 350 degrees F (175 degrees C) for 15 minutes, uncover, and bake until casserole is golden brown and bubbly.

I made it in a 1/2 batch. In the egg mixture I added a 1/2 tsp of each salt & pepper in a 8″ x 8″ tin foil pan, cuz our dishwasher was broke down & waiting for a repair person. We tried not to dirty too many dishes. I then added a 1/8 Cup of small cubed pieces of red & green sweet pepper, approx. 3-4 tblsp of finely chopped up green onion (keeping the white part separate from the green ends). I mixed all the white part of the chopped onion & approx. 1/2 of the green tops into the mix with the dry mixture. Once all mixed in the dry goods I proceeded to mix all dry items into the eggs mixture, mixing very well. Top with remaining cheese & sprinkle top lightly with paprika, cover with tin foil, bake following rest of recipe. After we took off film we baked for about another 10-14 minutes until lightly brown on top. We loved i.t
It was very good. We added shallots and used turkey sausage. I like that it didn’t need to sit 8 hours before baking like my other egg casserole recipe. We adjusted the oven temp up 25 degrees because we are on the edge of high elevation. I’ll make this again.
Not a fan. I actually followed the recipe exactly (except I stored it in the fridge overnight and cooked it longer.). It’s really dry. I don’t know if me cooking it twice as long did that. I took it out as soon as it got golden brown. It was easy and edible but nothing I’d make again.

Made it with a pound of beef and 1/2 pound of turkey bacon, all browned together in a skillet. Really good and very fast.

Great recipe. I used pre-cooked turkey sausage that I microwaved and then added to the recipe. This eliminates the need to cook sausage. Using whole wheat bread is a good alternative, too.
Made it for our office party and it was gone within 45 min! Will be making this again!
Very quick easy and inexpensive casserole for group brunch. I came back with an empty pan. I used chicken habanero sausage browned and cut into small pieces. I would not cube the bread next time but put it through the food processor for finer pieces.

I made mine out of leftovers! Roasted sweet potatoes and onions, stuffing, ham, and cheese.
I will definitely make this again, it was easy to make. I did add some bacon, peppers, onions, and garlic because I love these items for flavor.
This was good and very easy. I swapped out the 7 slices of bread for 7 Kings Hawaiian rolls. and added 4 eggs (for a total of 16 eggs.) Otherwise, I made the recipe as stated. It was very tasty.

I looked at this recipe to get some idea about what oven temperature to use. Oh so tired fattening food that I love the bread out and sautéed thin slices of Conecuh sausages onion grilled red peppers that I had left over and some Vidalia onion along with some fresh mushrooms. Added a little bit of milk in the egg mixture and dumped all that stuff in a baking dish. Not too shabby. Okay, I topped it off with some Mexican cheese blend.
