Ingredients

  1. 6 eggs, beaten
  2. ¾ cup onion, chopped
  3. ¼ cup all-purpose flour
  4. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  5. 1 (16 ounce) package small curd cottage cheese
  6. 1 (16 ounce) package shredded Cheddar cheese
  7. ½ cup butter, melted
  8. salt and pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish with cooking spray.
  2. Beat eggs, onion, and flour in a mixing bowl until flour is no longer lumpy. Stir in spinach, cottage cheese, Cheddar cheese, butter, salt, and pepper until evenly combined; pour into the prepared dish.
  3. Bake casserole in the preheated oven until bubbly and golden brown, about 45 minutes.

I have made this several times. My family loves it, and coworkers have asked me for the recipe. I like to add Italian Seasoning. Also, I add a cooked meat; such as ground pork or bacon. Today I added mushrooms.

Very good. I have made a similar recipe with broccoli, and it works just as well with spinach. I used a one pound bag of fresh spinach, microwaved it for 1 1/2 minutes, squeezed out the moisture, then chopped. Omitted the butter. Added a small amount of Andouille sausage, thinly sliced. Reduced the amount of onion and sauteed it with the andouille before adding to the mix.

I make this every year for Christmas morning. I have tried with raw and sautéed onions and in my opinion it is better with the onions going in raw. I do 1/2 tsp salt and 1/4 tsp pepper.

I made this with 8 eggs instead of 6 because I used a 16 oz. bag of spinach & 1 cup of onion. The rest of the ingredients were the same the cheese: I grated an 8 oz. block of swiss cheese to equal 16 oz. shredded. I think swiss tastes better with spinach than cheddar. My husband gave it a 10 out of 10!

delicious! used 8 eggs, cooked onion with 1-2 tsp minced garlic prior to adding to eggs; also added fresh parsley per others’ recommendation. after eating for dinner, I will freeze in squares to eat for breakfasts

I make this all the time today varying the addons today I added fresh spinach sauted in bacon grease with onions and peppers and fresh garlic. I also chopped up homemade Lebanon bologna and sauted with it let it cool and than added to egg mixture with fresh grated gouda cheese and added some moe garlic powder. Depending on what you want this recipe is versatile on the extras you add from different herbs and spices etc. I love this recipe
