Meatloaf that will please everyone can be cooked with either ground beef or ground turkey. Both taste great.

Ingredients

  1. 1 pound ground beef sirloin
  2. ½ cup salsa
  3. ½ cup Italian seasoned bread crumbs
  4. ½ cup shredded Cheddar cheese
  5. 1 egg, lightly beaten
  6. 3 cloves garlic, minced
  7. dried parsley to taste
  8. salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5×9 inch loaf pan.
  3. Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).

Great recipe. It’s almost like my Taco Meatloaf minus the Taco seasoning. I did add onion powder then 1/2 way through cooking I spread more salsa on top. When it finished cooking I sprinkled more shredded cheddar on top and left it in the oven until the cheese melted.

This has become a weekly favorite! I make it with ground turkey, and I add an unspecified amount of sirachi to add some kick. I cook it at 365F for 45 minutes and it turns out great. It’s juicy and full of flavor, and CRAZY easy.

Excellant!!! I really enjoyed this. Made with lean ground chuck, 1.5lb so increased other ingredients accordingly. Used 2 eggs and ended up with a cup a salsa when pouring and just went with it. Substituted cheese with what was in the house, an ounce of shredded pepper jack and diced a couple ounces creamy mozzarella sticks. Baked in oven at 350 shaped into loaf on broiler tray/pan to catch drippings for just over an hour. Then removed, covered with foil and let rest a few minutes. Daughter who doesnt typically care for meat loaf liked it and said she’d have it again.

Excellent change up for meatloaf! We are in quarantine because of flu going around, and I have limited supplies. But the most exciting part of the day for the family are meals, lol. They gobbled it up. I expected to have leftovers, but that didn’t happen. Everyone kept coming in to cut off a little bit until it was gone. I used 2#s of ground beef..lol. Now back to the freezer for inspiration for tomorrow.

I have made this recipe several times now and it is a hit! I’ve never found a good recipe for meatloaf without ketchup and was so happy to find this one. I’ve made it with hamburger, turkey and pork depending on what’s in the fridge and it always turns out GREAT!!!

Made it just like the recipe except I didn’t have any Italian bread crumbs so I used plain and added Italian seasoning, and I think I overdid it. But otherwise it was good, and only took 1 lb. of meat which is a big plus for a pair of empty-nesters. Will be making it again.

Delicious!! A family favorite. I often use ground turkey; and my adjustments are: use 3/4 of a jar of picante sauce/salsa, add more cheese (maybe double!), and often add chopped onions, as well as add extra clove of garlic! The extra sauce really adds to the moistness!

Great recipe!! I wanted individual portions, so I made it in a (greased) muffin tin. I also needed it to be gluten free, so I crushed up tortilla chips for the bread crumbs & it tasted great!!

This was delicious. I didn’t have enough Italian style bread crumbs so I used crushed tortilla chips. Just threw them in a plastic bag and used my rolling pin for no mess. The corn flavor was great with the salsa and shredded mexican style cheese I used . I actually made a 4 lb meatloaf, using half ground turkey and half 90% ground beef and there was almost no grease. Cooked it in a 9×13 pan. Can’t wait to make leftover meatloaf sandwiches with some avocado on top!

I love this meatloaf, l used Ritz cracker and l skipped the cheese. I doubled the recipe and baked it in a 9 by 13 pan for 1 hrs 10 minutes. This meatloaf freezes well. It is so moist and tender. CFC

This did not disappoint! My husband, a ketchup lover said he didn’t need it. Mixed everything the night before so I only had to shape it and bake. Followed ingredients exactly.
