These are a traditional treat in Rhode Island. So good in a soft sub roll with a sprinkle of salt. Even my kid enjoys dipping chips in it. A slow cooker may also be used to prepare this.

Ingredients
- 2 cups water
- 1 cup uncooked rice
- 1 (16 ounce) package turkey kielbasa, cut diagonally into 1/4 inch slices
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 clove chopped garlic
- 2 (15 ounce) cans canned kidney beans, drained
- 1 (16 ounce) can whole peeled tomatoes, chopped
- ½ teaspoon dried oregano
- ½ teaspoon pepper
- salt to taste
Instructions
- Prepare the rice: Bring water to a boil in a saucepan. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes.
- Meanwhile, cook sausage in a large skillet over low heat for 5 minutes. Stir in onion, green pepper, and garlic; saute until tender. Add in beans and tomatoes with juice. Season with oregano, pepper, and salt. Simmer uncovered for 20 minutes. Serve over rice.

I found this recipe here years ago, and liked it. Since then, it has consistently been a beloved part of my family’s regular meal rotation- and this is just about the highest honor I can give. I decided it deserves a rating. My only consistent change is that I *always* add cumin. Other than that, I might add other spices or not (try chili powder or smoked paprika), and I use whatever color of bell pepper I have on hand (and might use more than called for if I feel like it). Essentially however, this recipe is fantastic as written. This is a high bar in my family- cheap, nutritious, easy enough for almost any night, and it satisfies our differing preferences (even for my vegetarian- I just cook the sausage separately and the rest of us add it to our bowls). Major props.
This is always a staple recipe that I follow to make at our house. I always add some bay leaves, Cajun seasoning, and some broth. Always does the trick. Another tip I like to do sometimes is pull some of the beans out and mash with a fork and add back to the pot for a creamier red beans and rice.
The family loved it, not your typical red beans and rice but had such great flavor .

Very simple to make. We love sausage so we added a little more than required. Also added an extra clove of garlic as we love garlic as well. It could probably use a little more redheads but other than that this has been an amazing dish and smells so amazing while cooking. We can’t wait to try it shortly.

This is good. As to my own personal touch I added some cajun seasoning, diced tomatoes seasoned with garlic, oregano, and basil. For the beans I used Bushes Spicy Chili beans.
super easy and comes out perfectly. I only used one can beans and added Cajun spices. simmer until like a gravy before pouring over rice then fluffing.

This is a good comfort food. I accidentally bought two cans of navy beans instead of red. I had a can of black beans on hand so I made the dish with one can of navy beans and one can of black beans. It still tasted good, so a very forgiving recipe. I also added 1/2 teaspoon of salt since it says to salt to your taste. I always fix my rice with a chicken bouillon cube, butter and some salt. Other than that I made it as written. I really enjoyed this meal.
This is going into my weekly rotation. It hits the right spot – tasty, simple to make, and uses common ingredients. It’s also very easy to customize and add/remove things however you’d like. I made it almost exactly as listed the first time (I just added some cayenne and chili powder), but I’m looking forward to experimenting some more and trying other stuff with it.

The flavors don’t develop and it isn’t near the usual dish. In a pinch it is an okay meal.
was very good. used chicken broth for my rice and cajun seasoning. was a bit dry. next time I won’t drain the beans and maybe add broth to the mix as well.
I really enjoyed this version . It is not authentic Louisiana style but the poster did not claim it to be , it’s an easy take on it . I actually love the added tomatoes to the recipe and I love how easy it is . I did add a few more spices to add some heat For my taste .

Raised in Gulfport, MS I’ve had my fair share. This is a good starter recipe to introduce to others around the country who may have never tried it. Smoked hock is missing here, as is bay laurel but a good andouille is the key. Also, canned beans are well…canned beans so I know it’s for convenience but a good fresh soaked batch is better. Don’t mean to be a snob but like I said in the beginning this is a good start that can be improved upon.
Polska kielbasa was good. Will try with andouille next time.
