Easy Low-Carb Cauliflower Mac ‘n Cheese

This grilled red snapper recipe can be the answer if you don’t typically cook fish or don’t enjoy seafood. Normally, we don’t want to mask the delicate flavors of the fish, but in this situation, we are at a loss for what to do. Although you can definitely tell you’re eating fish, it’s still near enough.

Ingredients

  1. 1 head cauliflower, cut into florets
  2. 1 teaspoon salt
  3. 1 teaspoon mixed herbs
  4. ½ teaspoon ground black pepper
  5. 3 tablespoons olive oil
  6. 1 cup shredded Cheddar cheese
  7. ½ cup heavy whipping cream
  8. 1 tablespoon ghee (clarified butter)
  9. 1 pinch ground nutmeg
  10. 3 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  2. Arrange cauliflower on the prepared baking sheet. Sprinkle with salt, mixed herbs, and pepper. Drizzle with olive oil; toss until well coated.
  3. Roast in the preheated oven until crisp, 10 to 15 minutes. Place in an 8-inch baking dish.
  4. Combine Cheddar cheese, heavy cream, ghee, and nutmeg in a saucepan over medium heat; simmer until bubbly, about 5 minutes. Pour over cauliflower; mix well. Sprinkle Parmesan cheese on top.
  5. Bake in the preheated oven until golden, about 10 minutes.

This was delicious! Where it says “mixed herbs” is where you customize the dish. If you’re making an Italian, Creole, Mexican, or just have different preference or available ingredients, the idea is that the recipe is a slam dunk!

I used sour cream and just butter, was out of heavy cream and used rosemary garlic as the herbs, I also added 1 cup of shredded pork. Delicious!

Doubled the amount of cheese, put most of that in with the cauliflower so I could get some stringiness to the casserole. Delicious! Used homemade baby swiss, beer cheese, and smoked cheddar.

My husband loved it! I did not have mixed herbs and used lawrys seasoning salt. it was a tad on the salty side so I don’t know if I should decrease the salt or omit the lawrys seasoning salt.

It was okay – I added some extra veggies and ground (soy) beef to make it more of a main dish. But I think it was the mix of flavors that wasn’t really my thing. Maybe the nutmeg? Not sure but the spice mix was odd.

I didn’t care for it. It was very soupy. I ended up pureeing it, adding some cooked crumbled bacon, and made it edible, but won’t make again. Also, I thought it was a bit salty. I didn’t even put in the amount called for in the recipe, but still salty.
