Easy Japanese Fried Rice

Making fried rice at home is one of my favorite things to do, and this recipe couldn’t be simpler!

Ingredients

  1. 2 cups jasmine rice
  2. 2 cups chicken stock
  3. 1 ½ cups water
  4. 4 tablespoons butter, divided, or more to taste
  5. 2 large eggs, beaten
  6. 2 tablespoons vegetable oil
  7. 3 tablespoons sesame seeds, or to taste
  8. 2 tablespoons soy sauce (such as Kikkoman®), or to taste
  9. ⅛ teaspoon salt
  10. ⅛ teaspoon ground black pepper

Instructions

  1. Place rice, chicken stock, and water in a medium saucepan; bring to a boil. Reduce heat to low, cover, and simmer until tender and liquid has been absorbed, 15 to 20 minutes.
  2. Remove from the heat, stir in 2 tablespoons butter, and let cool to room temperature, about 30 minutes.
  3. Heat vegetable oil in a skillet over medium heat. Add eggs and scramble, stirring often to chop chunks of egg into small bits with a spatula.
  4. Place rice in a large mixing bowl, add eggs, and toss together.
  5. Melt remaining 2 tablespoons butter in a large frying pan over medium-high heat. Dump rice mixture into the hot pan. Add sesame seeds, 2 tablespoons soy sauce, salt, and pepper. Cook, stirring often, for 8 minutes.
  6. Taste and add more butter or soy sauce as desired. Serve.

This is a good, basic and relatively easy recipe. Good when your pantry or fridge is low. Or you have a hankering for fried rice but not up for a lot of prep work! I only used 1 c water (vs 1.5) because my Jasmine rice said 3 c liquid to 2 c rice. I also added a chopped onion and can of drained mushrooms – sautéd in oil (vs butter) and added rice/egg mixture when they were soft. For me; needed double the soy sauce. Again, nothing fancy but good fried rice! Could easily adjust to add another protein or veggies! Thank you!

This recipe was easy to follow and so very tasty. Instead of making 4 servings, I made 8 bc everyone here loves fried rice. The rice did not survive the night … LOL! I did leave out the salt & used low sodium soy sauce. I also added 1 tbsp ground ginger, it was very tasty.
