This Guinness chocolate cheesecake is quite rich and quite smooth. A close buddy loves Guinness and cheesecake. For his 25th birthday, he asked for a cheesecake with Guinness, and got this.

Ingredients

  1. 2 ½ pounds ground beef
  2. 2 eggs
  3. ½ cup Italian seasoned bread crumbs
  4. 1 teaspoon salt
  5. 1 teaspoon fresh cracked black pepper
  6. 1 green bell pepper, chopped
  7. 1 red bell pepper, chopped
  8. 1 yellow bell pepper, chopped
  9. 1 Spanish sweet onion, chopped
  10. 1 (16 ounce) package shredded Cheddar cheese, divided
  11. 1 (8 ounce) can tomato sauce, divided

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Mix ground beef, eggs, bread crumbs, salt, and black pepper together in a large bowl. Add green bell pepper, red bell pepper, yellow bell pepper, and onion; mix. Spread the beef mixture into a 13×9-inch glass baking dish.
  3. Make a trough in the middle of the meat mixture. Put 3/4 of the Cheddar cheese and half the tomato sauce into the trough. Fold the beef mixture around the cheese and sauce filling to form a loaf, pinching to seal. Loosely cover the meat loaf with aluminum foil.
  4. Bake in preheated oven until the beef is cooked through and the cheese in the middle is melted, about 45 minutes. Remove and discard aluminum foil. Top meat loaf with remaining Cheddar cheese and tomato sauce. Continue baking until the cheese melts, about 15 minutes. Rest meat loaf 10 to 15 minutes before slicing to serve.

Will not make again. Loaf is sitting in a 1” puddle of fat and water and the cheese and sauce that slid off the top. Tastes ok and held together nicely, but the cooking method does not work. The cheese sauce just oozes out into the sludge in the pan when you cut it, and the loaf is too big to just lift out of the pan first, while it’s warm.

My family loves traditional meatloaf with mashed potatoes or mac and cheese….the true comfort foods. This meatloaf was outstanding. Watch the cooking time closely so you do not over cook it. If prepared and cooked correctly, there’s no way you will not be impressed.
