Easy Chicken Fettuccine with Sun-Dried Tomatoes

I combined a few recipes I found to create this. Here it is because I thought the outcome was good. Excellent, quick side dish with a hint of heat.

Ingredients

  1. 4 ounces dry fettuccine pasta
  2. 1 pound chicken tenders
  3. 2 teaspoons Cajun seasoning
  4. 2 tablespoons butter
  5. 1 cup heavy whipping cream
  6. 3 tablespoons chopped sun-dried tomatoes
  7. 2 green onions, white part only, sliced thinly
  8. 1 tablespoon freshly grated Parmesan cheese
  9. ½ teaspoon salt
  10. ½ teaspoon dried basil
  11. ¼ teaspoon black pepper
  12. ¼ teaspoon garlic powder

Instructions

  1. Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
  2. Meanwhile, toss chicken tenders and Cajun seasoning in a bowl until well seasoned.
  3. Melt butter in a skillet over medium-high heat and saute chicken until browned, 7 to 8 minutes. Add cream, sun- dried tomatoes, green onions, Parmesan cheese, salt, basil, black pepper, and garlic powder. Cook and stir until completely heated, 2 to 3 minutes.
  4. Drain fettuccine. Serve chicken and sauce over the cooked fettuccine.

I’ve made this a few times and it’s always a hit. I do add more cheese than it calls for and omit the salt.

I skipped green onions, added 1tsp basil, milk and butter instead of heavy cream, added addl 1/2tsp parmasan….perfection!

My wife and I love this recipe! I use a little more heavy cream than the recipe called for and left out the green onions. She asks for this often.

I doubled the sauce because we like a lot of sauce on our noodles. Family thought it was delcious. I liked the fact that this was cooked in less than half an hour. Son wants this once a week.
