Ingredients
- 1 pound uncooked fettuccine or linguine
- 2 boneless chicken breast halves, cooked and cubed
- 1 (16 ounce) jar Alfredo-style pasta sauce
- 1 (10 ounce) package frozen mixed vegetables
- 1 (4.5 ounce) can sliced mushrooms
- ⅓ cup milk
Instructions
- Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain well.
- While the pasta is cooking, place cubed cooked chicken, Alfredo sauce, frozen vegetables, mushrooms, and milk in a large saucepan over medium-low heat. Cook and stir until chicken is heated through and vegetables are tender.
- Serve warm Alfredo and chicken sauce over cooked noodles.

Good but I added 2 jars of Alfredo and little more milk.
Had this last night and my family LOVED it! I’ve never added a mix of veggies to my Alfredo and it made a huge difference. I liked the change up and would recommend this recipe for your pasta loving family.
I must admit I was prepared to not like this due to the addition of vegetables. Whoever heard of putting mixed vegetables in Alfredo sauce?! But I forged ahead. I cut the recipe in half since I was serving only my husband and myself, and I used rotisserie chicken breast I had in the freezer. Oddly enough, my only complaint is that I ended up using more of the jarred Alfredo sauce and milk because the sauce was a little dry. Surprisingly, the vegetables weren’t off-putting at all. I can see this being a great way to get veggies in those picky kiddos, plus it’s really fast and quick to fix.
This is awesome! So easy to make. So quick. And delicious! It is close to 100° here and very humid. All I did is bake my chicken in the toaster oven rather than the big oven and the rest was a snap. Thank you for sharing.

SO GOOD!!! I had a huge, leftover, baked chicken breast & about a 1/2 pound of leftover, cooked rigatoni. I added 2 handfuls of frozen ‘classic mixed vegetables’ (peas, carrots, corn & green beans). I omitted the mushrooms at my wife’s request (& my disappointment). As it turned out, the mushrooms would have been lost in the flavors of the other veggies anyway. We added some black pepper & Parmesan at the table. It was awesome! I can’t wait for the leftovers!!!
Substituted peas for the mixed vegies and penne pasta for the fettuccini
I cubed two raw skinless boneless chicken breast halves and cooked them in a wok. Just two of us so I only boiled 5 ounces pasta and only 5 ounces frozen vegetables When chicken was cooked I added the rest of the ingredients and simmered for about 15 minutes until the vegetables were tender crisp. Both of us like it, it’s a keeper. Next time I might use cooked rotini and mix it in the wok with the rest of the ingredients.
Contrary to some of the other reviewers, I liked this recipe. It’s labeled Easy for a reason. If you want a challenging one, then look for one. No need to be rude when you never bothered to make it. That said, I made it as written except I forgot to buy the mushrooms. I will next time. I chose to use peas & carrots for the mixed veggies. Yes it’s easy, but I like easy recipes that don’t have a lot of ingredients. Personal preference. I will say that adding some garlic powder & grated parmesan cheese to the sauce as well as maybe seasoning the chicken somehow would give it more flavor. I’ll make it again.

I used fresh mushrooms and made my own Alfredo Sauce (Allrecipes ‘Alfredo Sauce’ recipe) as I can’t have dairy and switched to spinach linguine. My husband wants me to keep this recipe in the frig for bi-weekly meals.
Always have loved Alfredo Noodles w/ Chicken or Pork, so just to try it I used Shrimp & shredded crab meat & that was Totally Yummilicous! Will make it again & again & again!!!??
