Ingredients

  1. 2 tablespoons diced onion
  2. 2 tablespoons carrot matchsticks
  3. 1 tablespoon chopped fresh cilantro
  4. ¼ teaspoon chili powder
  5. ¼ teaspoon ground cumin
  6. 1 pinch cayenne pepper
  7. 8 uncooked medium shrimp, peeled and deveined
  8. 1 tablespoon olive oil
  9. 2 (6 inch) corn tortillas
  10. ½ cup shredded cabbage
  11. ½ cup Caesar salad dressing (such as Cardini’s Red Jalapeno Caesar Dressing®)

Instructions

  1. Combine onion, carrots, and cilantro in a bowl.
  2. Mix chili powder, cumin, and cayenne pepper together in a small bowl. Coat shrimp in the mixture.
  3. Heat olive oil in a small skillet over medium heat. Add shrimp; cook for 2 minutes. Turn and cook until pink, about 2 minutes more.
  4. Wrap tortillas in damp paper towels; microwave until warm, 15 to 30 seconds.
  5. Divide shrimp between tortillas. Top with cabbage, onion mixture, and dressing.

My roommate and I have been using this recipe for about a year now, and it is one of my favorites! We have been using blue cheese dressing instead of the Caesar dressing because it complements the spices nicely. Best Taco Tuesday or any day recipe!
