Ingredients

  1. 1 cucumber, peeled and thinly sliced
  2. 1 (8 ounce) package cream cheese, softened
  3. ¼ cup mayonnaise
  4. ¼ teaspoon garlic powder
  5. ¼ teaspoon onion salt
  6. 1 dash Worcestershire sauce
  7. 1 (1 pound) loaf sliced bread, crusts removed
  8. 1 pinch lemon pepper (Optional)

Instructions

  1. Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
  2. Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.
  3. Spread cream cheese mixture evenly on one side of each bread slice.
  4. Divide cucumber slices over half of the bread slices; sprinkle lemon pepper on cucumber.
  5. Stack the other half of the bread slices spread-side down over cucumber to make sandwiches; slice into triangles.
  6. To serve as a party appetizer, cut bread slices into rounds with a cookie cutter. Spread with cream cheese mixture and top each with a cucumber slice. Yields approximately 48 rounds.
  7. To make these the night before, cover with slightly damp paper towels, then cover with foil; store in the fridge.

Delightfully refreshing and crisp! Keep quite well as leftovers for a little while. The only change I might make is adding a bit of dill to the cream cheese spread mixture. Other than that near perfect!

I thought it was very refreshing and easy to make. I did substitute the Worcestershire sauce and lemon pepper for a dash of fresh lemon juice and one packet of crystalized lemon . I do not like Worcestershire sauce.

I was excited to try this recipe. It was easy to make. I thought is was just okay-worth making one time. Maybe if I made the spread the night before and let it practiced-it may be more flaorful? Thank you for the recipe! 🙂

Made for classic English Tea to celebrate Christmas with a large group of women. Well received. Adjusted the seasonings to include a dash of cayenne powder. Prepared cheese filling the night before. Filled full size sandwiches with cheese on both slices adding thin sliced cucumber and dashes of lemon pepper and dill to only one slice. Joined plain cheese haves with cucumber halves. Removed crust from bread and cut into quarters with electric knife before serving. Found this method created fully filled small sandwiches of an attractive appearance.

I make this with my kids all the time – we have altered the recipe some, not using the Worcester sauce because Kid A doesn’t like them, and lemon pepper only on the ones that Kid B and I would eat. This has become a FAVORITE lunchtime or snack in my house. At the beginning of covid we would have tea every other week with a friend of mine who is Scottish. The kids got chocolate milk in a glass teapot, the adults drank Scottish Breakfast, and we would munch cherry tomatoes, sugar snap peas, prosciutto, petite fours, and cucumber sandwiches. It was a wonderful time to be able to spend together.

I served these sandwiches at a Bridal Tea that I hosted and they were a hit! I’m saving this recipe as we’ll definitely want to make these for everyday. I sweated my cucumbers a few hours prior to assembling the sandwiches. We assembled the sandwiches right before serving and garnished with fresh violets.

Used a round cookie cutter, as close to the size of a large cuce(peeled and sliced thinly) followed the recipe exactly. Made 2 seving plates full. These little, cute sandwiches were GONE in a flash! They’re cool and refreshing. Everyone was asking if there were any more! Definitely gonna make these again! Just A LOT more!! 2 thumbs up????

I have always wanted to try these little sandwiches. I would say it was good but not great. Seemed like a lot of bread and not a ton of flavor. I sprinkled some dry dill weed on the sliced cucumbers and I used onion powder cause that’s what I had. I would not recommend making ahead of time.

Most of my family loves this, which is saying something. I’m taking off a star because the recipe doesn’t include dill. I put a generous amount of dried dill in it. With that, it is a 5 star recipe.

I substituted Onion Powder for the Onion Salt. Added a little lemon zest and dry Dill.
