Creamy Pasta with Imitation Crab

Easily prepared but full of flavor is this creamy pasta sauce with imitation crab.

Ingredients

  1. 2 tablespoons olive oil
  2. 1 medium onion, diced
  3. 6 cloves garlic, minced
  4. 1 pound imitation crabmeat, diced
  5. 1 (16 ounce) package rotini pasta
  6. 1 cup half-and-half
  7. ½ cup chopped fresh parsley
  8. ⅓ cup grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil.
  2. At the same time, heat oil in a large saucepan over medium heat. Add onion and garlic to the hot oil; cook until translucent, about 5 minutes. Stir in imitation crab and heat for 2 minutes.
  3. Begin cooking rotini. Add to the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  4. While the pasta is cooking, stir half-and-half and parsley into the crab sauce; bring to a simmer. Continue to simmer crab sauce, adding pasta water as necessary, while pasta is finishing.
  5. Drain pasta.
  6. Mix Parmesan cheese into crab sauce and heat until melted, about 2 minutes. Serve over pasta.
  7. You can use any pasta you’d like.

This is good way to use imitation crab meat and it’s easy to adjust to your liking. I used non-fat milk with a little flour and simmered until it had thickened. Then added it to the sauted garlic, onion, and crabmeat. I also like spices so I added salt, pepper, and old bay seasoning.

This was so good! Since other reviewers mentioned that it could use a higher sauce to pasta ratio, I added more heavy cream and Parmesan (for thickening the additional liquid), plus some salt for my family’s taste.

My husband does not like the texture of onions. I used minced onion, bottled garlic, milk and dried parsley. I added cooked bacon with the crab. I thickened with cornstarch using pasta water. .yummy!
