Creamy Pasta Carbonara

A custard is enclosed in a flaky phyllo pastry shell in the traditional Greek dessert known as galaktoboureko. When I was a kid, my mom frequently made this dish, which she learned to make from a coworker. It remains a household favorite even after all these years. I wish everyone could appreciate it as much as we do.

Ingredients

  1. ½ pound bacon, cut into small pieces
  2. 4 large eggs, at room temperature
  3. ¼ cup heavy cream, at room temperature
  4. 1 cup grated Parmesan cheese
  5. 16 ounces dry fettuccine pasta
  6. ¼ cup butter, softened
  7. ¼ cup chopped parsley
  8. ground black pepper to taste

Instructions

  1. Cook and stir bacon in a large skillet over medium-high heat until evenly browned and crisp, about 10 minutes. Drain on a paper towel-lined plate and set aside.
  2. Beat together eggs and cream in a medium bowl until just blended. Stir in Parmesan cheese and set aside.
  3. Fill a large pot with lightly salted water and bring to a rolling boil. Cook pasta in boiling water until tender yet firm to the bite, about 8 minutes. Drain and return pasta to the pot.
  4. Add softened butter to the pot and toss with pasta until butter is melted. Add bacon and egg-cheese mixture. Stir until the heat of pasta cooks eggs, then garnish with parsley and black pepper to serve.

I sauteed the garlic in the the butter and cooked bacon crumbles with a 1/2 tsp of chili flakes (for some heat) to the pan,cooking about 5 minutes together. Mixed the eggs with cheese, 1/2 and half milk and parsley together and ADD 1/4c of the salted pasta water, (AFTER the pasta was cooked) to thin and warm the eggs mixture. I added the hot pasta, egg mixture on top and stirred.. *OPTIONAL top with some fresh grated parmesan…AWESOME! Now a favorite and will make this again for sure:)

This is very tasty! The only thing is that the directions never tell you to cook it after you add the sauce – definitely cook with the sauce before eating!

I use Salted Pork and it knocks it out the park. Had some when I went to Florence and it was not as good without it. My wife asks for it for her cheat days. I go to the gym five days straight after eating it. It’s that good!

I added frozen peas. I thought about saving a little of the pasta water to make the sauce a little less thick. I wish I had. Sauce was very flavorful, but was really thick. I’ll try the pasta water next time. Overall, very good meal and hubby approved!

Loved this! Made it after reading several reviews; did not add the butter listed in the recipe and didn’t miss it. I did add a tablespoon of sherry because I like the flavor it imparts. I will do this again in place of alfredo! I’ll serve this with shrimp, chicken, pork . . . .!

I made it but I used 100% lactose while milk instead of heavy cream. And 4 eggs. After I mixed in the milk and eggs and butter to the frying pan, with the fettuccine, it was kinda like cooking eggs and got eggy a bit. I added chicken, mushrooms, bacon and parsley as well. The outcome was kind of disappointing. Too much egg and not a taste of the cream sauce. It’s kind of like eating just plain pasta with chicken, bacon, mushrooms, and parsley. I must of cooked it wrong or something.

My family and I loved this recipe, all but the 2 year old had seconds. I used angel hair pasta instead of the fettuccine noodles. I didn’t have the amount of bacon on hand, so I added a little Canadian bacon to the dish. I would definately make this again.

I love it! First time I do pasta carbonara and it came out awesome!!! Just follow step by step and you will have the best pasta carbonara. And if you want you could add some chicken!!!

If you’re finding that your sauce comes out lumpy or doesn’t come together, before you post a negative review, make sure you’re using the right cheese; don’t use the powdered stuff obviously, but also make sure that your cheese is VERY finely grated (not shredded… It should be basically pulverized). If yours is shredded, pulse it in the food processor for a few seconds and you’re good to go! Anyway, this recipe was awesome, although I don’t use cream (it’s more traditional that way) and thin it out with some of the pasta water. I also brown up some garlic in a touch of butter and mix that in. Perfect!

I happened to have some ham and chicken in the fridge. I diced those up with the thick sliced bacon. I didnt have fettucini, so i used Penne. Made it easier for the littles to get in their mouths. Very easy to make, delicious & packed with protein. I have 4 kids that need the added nutrition. Five stars from everyone in the family.

I really wanted to like this recipe, but it was a no go for us. The sauce was barley enough for a full box of pasta. Also, once everything was combined the flavor wasn’t there and the whole dish tasted bland. The only good part was the bacon. 🙁
