Ingredients
- 4 cups water
- 1 (16 ounce) package dry elbow macaroni
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon freshly ground black pepper
- ¾ cup milk
- 2 cups shredded Cheddar cheese
- 1 cup shredded Gouda cheese
- ½ cup crumbled cooked bacon
Instructions
- Combine water, macaroni, salt, garlic powder, onion powder, and pepper in a multi-functional pressure cooker (such as Instant Pot®); stir until well combined. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 6 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid.
- Stir in milk, Cheddar, and Gouda gradually, alternating between a little of the milk and a handful of cheese at a time. Stir until the cheeses are melted. Stir in crumbled bacon and serve.

I made this according to the recipe however, I left out the bacon due to meat sensitivities in the family. It seemed like it was going to be awesome when I dished up the first portion, stringy cheesy goodness but in a matter of 30 minutes it was settling and beginning to be dry. Also just kind of bland. The leftovers were practically inedible. Cheese and noodles should be a no brainer, seems like it needed something more.
This was a thing we made. It was pasta with cheese on it and bacon in it. It’s an edible thing that tastes like what the title says. We ate it, but it wasn’t really exciting. Also, it needs more cheese than what’s called for.
Delicious! We added brocolli florets as one comment suggested. Big hit with my husband and daughter.
My wife’s favorite dish now! cut back the salt by half and added broccoli florets. So ‘Ono!
Appreciate that I can make mac and cheese using my instant pot for those times I’m running short on time. The only thing I wish I could change is when you make it as a one-pot meal, you don’t get to rinse all the starch off of the noodles which makes it even a little more unhealthy and also a thicker consistency. Other than that it works and is super fast! I do add Dijon mustard and jalapeno’s (family favorite)

So I Try to follow the recipe as close as possible the first go around, so I can review it as accurately as possible. I did use shells instead of elbow Noodles because it’s what I had. Found some smoked Gouda… and probably put in more bacon… some things just don’t need measured…. Even my husband who isn’t a Mac and cheese fan said it was pretty good. The smoked Gouda gave it a wonderful Smokey and smooth flavor. It was def worth adding the the favorites list.
