The 1/2 teaspoon of liquid crab boil is the key ingredient in this dish. In this delicious soup, you can add crab or shrimp.

Ingredients

  1. 1 tablespoon olive oil
  2. 1 onion, chopped
  3. 1 green bell pepper, chopped
  4. ½ cup chopped celery
  5. 4 cloves garlic, chopped
  6. 2 cups black beans, rinsed and drained
  7. salt and ground black pepper to taste
  8. 3 cups cooked white rice

Instructions

  1. Heat oil in a frying pan over medium heat. Add onion, bell pepper, celery, and garlic and saute until softened, 5 to 7 minutes. Stir in black beans with their juices, salt, and pepper. Saute until some of the liquid evaporates, 3 to 5 minutes. Stir in rice.
  2. Cover and let simmer until vegetables are soft and flavors have melded, about 15 minutes.
  3. Spice it up according to taste. You can use cooked red beans instead of black.

Haven’t made this exact recipe but after visiting Costa Rica several years back, I fell in love with Gallo Pinto and created my own simplified version using Knorr Mexican rice, canned black beans, Worchester sauce and pineapple chunks.
