Corned Beef Hash Quiche

I discovered some ready-made sofrito in a store’s freezer section, and I also discovered a homemade version of it in a Latin American store’s refrigerator case. This recipe’s foundation is made up of finely chopped peppers, onions, garlic, tomatoes, and cilantro. Soon, try making this quick chicken with cauliflower rice for dinner! Capers and new parsley are garnishes.

Ingredients

  1. 1 tablespoon unsalted butter
  2. 1 small onion, chopped
  3. ½ cup diced cooked ham
  4. 4 large eggs
  5. ¼ cup milk
  6. 1 teaspoon garlic powder
  7. salt and ground black pepper to taste
  8. 1 (15 ounce) can corned beef hash
  9. 1 (9 inch) frozen deep-dish pie crust
  10. 1 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Melt butter in a skillet over medium heat. Saute onion and ham in the melted butter until onions are soft and ham begins to brown, 8 to 10 minutes. Remove from the heat and set aside to cool.
  3. Whisk eggs, milk, garlic powder, salt, and pepper together in a large bowl.
  4. Evenly spread corned beef hash onto the pie crust, pressing firmly with the back of a spoon. Spread ham and onion mixture over top. Pour egg mixture over the top until filled; avoid overfilling. Top with Cheddar cheese.
  5. Place the quiche on a cookie sheet and bake in the preheated oven until crust is golden brown and center is set, 25 to 30 minutes. Remove from the oven and let stand for 10 minutes before slicing. Serve warm.
  6. You can use any cheese in place of Cheddar.

So easy to put together! I needed something to do to hide the corned beef hash from my husband~he claims he doesn’t like it. I used bacon instead of ham and he loved it!
