To make use of leftovers, I came up with this. Pork cutlets are used in the recipe, although any kind of meat would work. Use any garnishes you like.

Ingredients
- 3 tablespoons mayonnaise
- 1 canned chipotle pepper, diced
- 3 cooked pork cutlets
- 3 naan breads
- 2 tablespoons water
- 3 slices Gouda cheese
- ¾ cup shredded lettuce
- 3 green onions, chopped
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Combine mayonnaise with diced chipotle pepper in a small bowl; mix well to make chipotle mayonnaise.
- Place pork cutlets and naan bread on separate baking sheets. Sprinkle water over naan bread.
- Heat pork cutlets in the preheated oven until warmed through, about 5 minutes. Top each cutlet with 1 slice of cheese and continue to heat until cheese is melted, about 5 minutes. Remove from oven.
- Warm naan in the preheated oven until softened, about 5 minutes. Remove from oven.
- Spread chipotle mayonnaise over each naan bread; place a pork cutlet on top. Top with shredded lettuce and green onions; fold sides of naan over pork.
- Warm cooked pork cutlets in microwave if preferred.

I did not have leftover pork cutlets but bought them specifically for this recipe. I debated on which way to cook them but I wanted some extra crunch and decided to fry them. I first dusted the cutlets in flour, then in beaten egg, finished them off with Panko bread crumbs and then fried them in a little bit of oil on the stove. I am happy with my choice because these turned out great! I bought the mini naan’s which ended up being a little small. There was no extra naan to fold up around the pork to eat like a taco so mine were more like a tostada . This is a good recipe and one that could be easily adapted to what you have on hand.
This was pretty average. My hubby wasn’t a fan.
