This dish for chicken fried rice is delicious and incredibly simple. Basically, it’s a stir-fry with cooked chicken, rice, soy sauce, and chopped egg. Use leftover cooked rice for the best results.

Ingredients

  1. 1 egg
  2. 1 tablespoon water
  3. 1 tablespoon butter
  4. 1 tablespoon vegetable oil
  5. 1 onion, chopped
  6. 2 cups cooked white rice, cold
  7. 1 cup cooked, chopped chicken meat
  8. 2 tablespoons soy sauce
  9. 1 teaspoon ground black pepper

Instructions

  1. Beat egg and water together in small bowl. Melt butter in a large skillet or wok over medium-low heat; add egg and cook without stirring, 1 to 2 minutes. Remove egg from skillet and cut into shreds; set aside.
  2. Heat oil in the same skillet. Add onion; cook and stir until soft, about 3 minutes. Stir in rice, chicken, soy sauce, and pepper. Cook and stir for about 5 minutes; stir in shredded egg. Serve hot.

It says chicken fried rice, The recipe has no chicken in it. How do I cook the chicken> Every time I cook chicken, it comes out super dry.

I made this and it turned out delicious. The only substitutions I made were sesame oil where it called for vegetable oil, and a little less than 1 tsp of black pepper. I tried doubling the recipe and it was good but something was missing, not sure what?

We love this recipe! We used sesame oil instead of vegetable oil. After dining at a Thai restaurant, we added a Thai twist. Fresh pineapple tidbits, golden raisins, a little garlic and red pepper flakes jazz it up. The next time we made it, we added shredded leftover duck breast!

Good base recipe. A few changes and choices: I used sesame oil instead of vegetable oil, added just .5 tsp black pepper, but added .5 tsp garlic powder as well. For the chicken, I used boneless, skinless chicken thighs cooked in oil and seasoned with salt and pepper. It definitely can use a little extra something, so I would try adding some bell pepper and/or peas. I also might add an extra cup of rice, because the ratio of rice to other items seemed a little low.

This is a good base recipe and leaves a lot of room for you to add in things to your liking. Use toasted sesame oil it changes everything and has a wonderful taste. Other add in options, meat, bean sprouts, green onion, garlic. The options are endless.

Very good recipe. Just looking at the ingredients and I see this recipe might need some flavoring. I added a chopped green pepper and added that to the onions to saute. I also added 2 tspns of red pepper paste while I cooked my chicken, then used that pan to cook the eggs. Also used that pan for the rest of the recipe. I added 2 cloves of garlic, sliced thin, and finely chopped about 1 tspn of ginger, adding them to the sauteing onion and pepper. At end of recipe I added steamed broccoli.

I have made this chicken fried rice so many times. I cook it exactly as recipe calls for and add peas at the end. So delicious as easy to make!
