Ingredients
- 4 zucchini, cut into spirals using a spiral slicer
- 1 teaspoon salt
- 1 tablespoon Italian seasoning
- 4 skinless, boneless chicken breast halves
- salt and ground black pepper to taste
- 1 cup marinara sauce
- cooking spray
- 4 slices mozzarella cheese
- ¼ cup freshly grated Parmesan cheese, or to taste
Instructions
- Line a baking sheet with parchment paper.
- Place zucchini spirals in a colander and sprinkle 1 teaspoon salt and Italian seasoning over zucchini; toss to coat. Set colander over a bowl to allow water from zucchini to drain.
- Wrap chicken in plastic wrap and place on a work surface; pound into 1/4- to 1/2-inch thickness. Remove plastic wrap and season chicken with salt and pepper.
- Heat marinara sauce in a saucepan over low heat.
- Coat a nonstick skillet with cooking spray and place over medium-high heat. Cook chicken in the hot skillet until browned and no longer pink in the center, 4 to 5 minutes per side. Transfer chicken to the prepared baking sheet.
- Set oven rack about 6 inches from the heat source and preheat the oven’s broiler.
- Place zucchini in the same nonstick skillet over medium-high heat; cook and stir until tender yet firm to the bite, 3 to 4 minutes.
- Spoon marinara sauce over each chicken breast and top with mozzarella cheese.
- Broil chicken in the preheated oven until cheese is melted, 1 to 2 minutes.
- Transfer zucchini to each serving plate and add chicken. Spoon warm marinara over each piece of chicken and top with Parmesan cheese.

This was delicious. I would only warm the zucchini for a minute tho as in 3 minutes, it was overdone.
I used almond flour to bread the chicken and mixed in some fresh parsley. Turned out great!

I used frozen zucchini noodles, cooked according to the package, and then seasoned as this recipe directed. After cooking the chicken, I put the zucchini noodles in that dish and then placed cooked chicken on top with the marinara and mozzarella. I placed it under the broiler until the cheese was starting to brown. So easy doing this in one dish!! Will make it again for sure.

This is a keeper! So simple, and a much healthier alternative than traditional breaded with noodles chicken parm! We loved it (I used PC blue menu marinara as it’s our favourite) and it will become a regular in our house for sure! I did find it a tad bit salty so I will use a bit less next time, but I loved the Italian seasoning in the zucchini noodles! Gave them a great flavour

What a great dish to use your fresh zucchini from the garden. The whole family loved it.
The chicken was excellent. However, the zucchini was a little salty, and the Italian seasoning was overpowering. Next time, I will use less salt and just top with marinara sauce.
I used only two zucchini (large) and 3 large chicken breasts because that’s all I had. We had enough zucchini. I used Vodka sauce instead of marinara because my hubby doesn’t like the marinara as much as he gets older. Will I make it again? Yes. What will I do differently? Less Italian seasoning on the zucchini which I’m happy to say I did not overcook. I think I will cut the breasts into 3rds before pounding them and pound them more. I didn’t pound them enough. Seems like it took a lot longer than 20 minutes to prepare…
First time making zucchini pasta and cooking in general as my wife is the cook generally. This recipe was easy enough for me and healthier. It turned out amazing.
My husband made this dish for me – it was terrific!! (As we are newly married, this is actually his first meal he’s ever cooked for me) 🙂 I loved the spiral zucchini ‘noodles’! Also, the fresh mozzarella and sauce were perfect toppings for the chicken. A guilt-free, healthy meal – this recipe is a winner in my book!……I think he’s a keeper too 😉

Yum! I left out the salt and added spirals of carrots (I needed to use it up) and minced garlic. Otherwise prepared as written. I liked this better than conventional chicken parmesan. Serve with a nice crusty bread.
