Chicken Cacciatore with Creamy Mashed Potatoes

With mushrooms, peppers, and tomatoes on top of creamy mashed potatoes, change up your usual chicken dish. This tasty, quick lunch is also low in fat.

Ingredients

  1. ¾ pound red potatoes, cut into 1-inch chunks
  2. 1 ½ cups small fresh cauliflower florets
  3. 4 (4 ounce) boneless skinless chicken breast halves
  4. ½ cup KRAFT Lite Balsamic Vinaigrette Dressing
  5. 1 (8 ounce) package sliced fresh mushrooms
  6. 1 green bell pepper, chopped
  7. 1 yellow bell pepper, chopped
  8. 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
  9. ½ cup PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
  10. ¼ cup chopped fresh basil

Instructions

  1. Cook potatoes and cauliflower in boiling water in large saucepan 20 min. or until tender.
  2. Meanwhile, cook chicken in large nonstick skillet sprayed with cooking spray on medium heat 3 to 4 min. on each side or until golden brown. Transfer to plate; cover to keep warm.
  3. Add dressing, mushrooms and peppers to skillet; cook and stir 6 min. Add tomatoes; simmer 8 min. Return chicken to skillet; spoon sauce over chicken. Simmer 3 min. or until chicken is done (165 degrees F).
  4. Drain potato mixture; return to pan. Add reduced-fat cream cheese; mash until potato mixture is fluffy. Serve topped with chicken, vegetables and basil.
  5. Substitute Italian parsley for the basil.

We had it so added proscuitto diced when we sauteed’ the mushrooms and onions and added 4 finely minced (or grated) cloves – wonderful on cauliflower (potato).

good just like it was. (except did not have a yellow pepper). I think the balsalmic vinaigrette really spiced it up. will definitely make again, maybe trying to increase the tomato/mushroom/pepper sauce since it was good to also top the mashed potatoes with. plus fresh basil! Yum!!!

It was healthy, filling, better if it wasn’t so runny. Next time drain the tomatoes. We did not use green pepper.

This was so delicious! I don’t like cauliflower, so I used all red potatoes. I also found they needed some cream because my family likes creamy potatoes. Other than that, I followed the recipe exactly. I’m making this again today.
