Chicken Cacciatore in a Slow Cooker

It’s really easy to prepare this chicken cacciatore recipe in the slow cooker. Simply place everything in the slow cooker, and let it to cook all day. When I can find it, I like to serve this with thin spaghetti that has garlic and herbs.

Ingredients

  1. 4 skinless, boneless chicken breast halves
  2. 1 (28 ounce) jar spaghetti sauce (such as Classico® Cabernet Marinara with Herbs)
  3. 1 (6 ounce) can tomato paste
  4. 4 ounces sliced fresh mushrooms
  5. ½ yellow onion, minced
  6. ½ green bell pepper, seeded and diced
  7. 3 tablespoons minced garlic
  8. 1 ½ teaspoons dried oregano
  9. ½ teaspoon dried basil
  10. ½ teaspoon ground black pepper
  11. ¼ teaspoon red pepper flakes (Optional)

Instructions

  1. Gather all ingredients.

  5. Stir in spaghetti sauce, tomato paste, mushrooms, onion, bell pepper, garlic, oregano, basil, black pepper, and red pepper flakes.

I used chicken thighs with skin-I browned the thighs and removed the browned skin. I added garlic to my dish and placed the skins on top of the recipe in the crockpot. after 6 hours in the crockpot I removed the skins before serving. The caccitorre was very good and super moist. I am not fan of putting raw chicken in my crockpot.

The peppers and chicken went straight from the freezer to crock-pot at 11 AM. I made it with skinless thighs which fell off the bones and was as if shredded into the sauce. Picked the bones out and served over pasta bows. Was done and ready at 5 PM. Had enough sauce left for a late-night snack on toast. Mmmmm!

This is a simple and delicious meal. I do recommend using boneless skinless chicken thighs as other reviews recommend and only Cooked for 4 hours on low. Served over basmati rice topped with Parmesan cheese, a side garden salad and roasted naan bread. Great easy meal!

Made it per recipe although my gut told me not enough fat or flavor & I was correct. Suggest using chicken thighs and doubling the onion and spices, and making the 1/4 tspn red flake mandatory. 2nd time up I blended this with my cacciatore style, which in true hunter style I used what I had. Chicken breasts complimented with a cup of turkey stock I made with the Christmas eve turkey (for the fat). Used up some shallots, green onions and a quarter sweet onion I had on hand, chopped up some carrots (adds sweetness), canned mushrooms, double the spices, added a bit of rosemary, threw in an aging tomato diced, and a couple artichokes left over (canned) with the jar leftover sauce I had, about one cup. My belief is cacciatore should not be a heavy red sauce so I left out the paste. Cook on high 3 hours low three hours shred the chicken, put it on whatever you like. I suggest a couple celery stalks chopped if you have, mine were wilted and went to the rabbits outside.

Followed the recipe and found it could use a few tweaks. Nothing major Chicken thighs instead of breasts. Use of fresh herbs and if all that is available are dried, in any case put them in about an hour before ready to serve. More garlic. Have made this tree times and making a fourth. If the fourth is anything like the first 3, there will be no leftovers.

Not sure why this recipe would get any negative reviews. Served with loads of mozzarella cheese, Shredded Parmesan and salt and pepper. I dumped over cooked spaghetti and served with broiled basil bread. Fantastic meal and a hubby pleaser.

A perfect meal for just before Friday, a dinner which brings much joy and good to share during light conversation. Made several changes such as the addition of a white sauce to the basil and garlic pesto. Fresh shaved cheese and red onions for the yellow onions made a big taste change.
