Excellent Greek rice salad. Although you can omit the avocado if you like, it gives the dressing a slightly creamy texture. It is best prepared the day before serving.

Ingredients

  1. 1 (2 pound) fully-trimmed flat iron steak
  2. salt and pepper
  3. 8 ounces brown clamshell mushrooms, grilled, separated
  4. salt and pepper to taste
  5. 1 tablespoon sherry vinegar
  6. 2 tablespoons extra virgin olive oil
  7. 3 tablespoons barbeque sauce
  8. 2 tablespoons vegetable oil
  9. 1 tablespoon cider vinegar
  10. 6 hot dog buns
  11. ½ cup mayonnaise, or as needed
  12. 1 cup arugula leaves, or as needed
  13. 1 cup quartered cherry tomatoes

Instructions

  1. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  2. Cut steak into 6 thick strips. Season generously with salt and pepper.
  3. Grill mushrooms for 5-6 minutes over medium-high heat until they begin to wilt. Remove the stem end to separate the mushrooms.
  4. Stir mushrooms in a bowl with salt and pepper, sherry vinegar, and extra virgin olive oil. Set aside.
  5. Grill steaks for 3-4 minutes per side over medium-high heat, until medium rare or to desired doneness. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Let rest for 5 minutes.
  6. Whisk together barbeque sauce, cider vinegar and vegetable oil. Set aside.
  7. Serve grilled steaks on hot dog buns with mayonnaise, arugula, cherry tomatoes, grilled mushrooms, and barbeque sauce mixture.

Listen to Chef John and let the steak be the star so definitely on a hot dog bun so the bread can’t overpower, Found all the ingredients at sprouts, except I used a Costco prime top sirloin cap off steak. Buy them in the vacuum sealed bag for $6-7 a lb & let it rest unopened in the fridge for up to 30 days. Great sauces just as written in the recipeThanks again Chef

Great steak. I didn’t quite get the steak cooked enough for it to be really tender but that’s hardly the fault of the recipe. The mushrooms were a hit with my non mushroom eating wife.
