Cheesy Bacon Ultimate Dogs

The Columbia River Gorge is where I reside. Because so many cherries are produced in a short period of time, producers sell pounds of the fruit during cherry harvest. There’s just so much cherry pie and ice cream one man can consume, so I came up with a savory recipe!

Yield: 4 hot dogs

Ingredients

  1. 1 teaspoon prepared yellow mustard
  2. 4 hot dogs, butterflied
  3. 2 ounces cheddar cheese, sliced into 8 matchsticks
  4. 4 strips thick-cut bacon
  5. 8 toothpicks
  6. 4 hot dog buns, split
  7. 1 large (5 inch) dill pickle, sliced into 8 long strips

Instructions

  1. Preheat grill for medium heat and lightly oil the grate.
  2. Smear 1/4 teaspoon mustard inside each butterflied hot dog. Put 2 Cheddar cheese matchsticks inside each hot dog.
  3. Secure one end of a bacon strip to one end a hot dog using a toothpick. Wrap the bacon strip tightly around the entire hot dog, securing the far end with another toothpick; repeat for remaining hot dogs.
  4. Cook on preheated grill until hot dogs are heated and bacon is cooked through, 4 to 5 minutes per side.
  5. Place each cooked hot dog onto a bun and top with 2 pickle slices.

Made this recipe today. This is a keeper for sure. I used colbyjack cheese and farmland bacon. I brushed BBQ sauce on very light to seal in the juices. We will most definitely make these again.

I saw a picture on Facebook made this without ever seeing this recipe. The only differences is I didn’t add mustard or pickles. Plus I put it in the oven at 350 for 15 min.
