This is a very hands-off Instant Pot adaptation of my favorite Six Can Tortilla Soup recipe from Allrecipes. Feel free to add more of your preferred tortilla soup toppings, such as diced avocado, sour cream, cilantro, red onion, etc., to personalize the dish. My general guideline for this soup is that every topping that goes well on a taco also goes well on top of it.

Ingredients

  1. 2 pounds ground beef
  2. ¾ cup fresh bread crumbs
  3. ½ cup minced onion
  4. 2 large eggs, beaten
  5. 1 ½ teaspoons salt
  6. 1 ½ teaspoons ground black pepper
  7. 3 cups shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Combine beef, bread crumbs, onion, eggs, salt, and pepper in a large bowl; mix well. Pat out meat mixture into a 14×18-inch rectangle on a piece of wax paper.
  3. Spread cheese over meat, leaving a 3/4 inch border along the edges. Roll up jelly-roll fashion to enclose the filling and form a pinwheel loaf. Press meat in on both ends to enclose cheese. Place meatloaf in a 10×15-inch baking dish.
  4. Bake in the preheated oven until cooked through, about 1 hour. An instant-read thermometer inserted into the center of meatloaf should read at least 160 degrees F (70 degrees C).

This recipe was so easy and the meatloaf was delicious. The only difference was I added three types of cheddar and threw in a little pepper jack. It turned out great. My.whole family loved it. So sorry I forgot to take a picture.

Delicious. I took advice from another reviewer and flattened meat into rectangle. Then cut it in half and spread the shredded cheese on one half, and placed other half on top. I did omit all salt since cheese is salty. Because it “looked” rather bland, I mixed 1/3 cup catsup with two TBS of Worcestershire Sauce and spread on top of meat the last 15 minutes of cooking. (I also poured the excess grease off the meat before putting sauce on top). The recipe was easy to make and was delicious.,

This was a huge hit!! My boys devoured it!! The only changes I made were adding a sautéed shallot to the loaf and smothering the top with mustard and ketchup and layering it instead of using the jelly loaf method. It came out perfect and the kids are already asking me to make it again!!

My only problem is I didn’t take a picture lol. I made some changes mainly in the seasoning. Couldn’t just use salt pepper and onion I thought it would come out bland. So I used the onion but added garlic powder, adobo and Parmesan. As for the cheese didn’t use cheddar we had Mexican already in the house so I used that. Sooo flavorful! Was suppose to have left overs for night but it’s gone lol my husband devoured it. It was like watching someone who hasn’t eaten in days lolz. And may sound silly but I thought it was fun to make cause I mixed everything with my hands so it was like being a kid n getting all messy lol (I’m 34 lol) but this recipe is definitely a keeper!

My family loves this meatloaf!!!!! It’s so easy and tastes amazing. We have even put bacon on it a couple of times to change it up. Definitely a once a month meal for us.

Followed as directed and even tackled the pinwheel effect. Took a little effort, but once I got the hang of it, was well worth the effort. Looked great and tasted great. I did make a sauce out of ketchup, mustard and brown sugar to coat the outside and added it about halfway through baking. Everyone loved it!

Amazing, I altered it by stuffing with mushrooms and Italian cheese blend. I pressed it out on parchment paper and refrigerated it, to help it roll easier.

I’ve noticed some people struggling with rolling into a jelly roll. Line a shallow baking (cookie) sheet with parchment, press meat mixture firmly and evenly on parchment. Spread shredded cheese, I also added 1/4 cup dill relish at this stage. Using parchment paper, start rolling from narrow end. Smoothing as you roll. Then enjoy this tasty meatloaf variation.
