Ingredients
- 1 (16 ounce) package rotini pasta
- 2 tablespoons olive oil
- 2 pounds chicken breasts, cut into 1-inch pieces
- 1 tablespoon onion powder
- 2 cloves garlic, crushed
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup chicken broth
- ¼ cup all-purpose flour
- 1 (16 ounce) package shredded Cheddar cheese, or as desired
- 1 (14.5 ounce) can diced tomatoes, drained
- ¼ cup heavy whipping cream
- 3 tablespoons butter
- 1 tablespoon hot sauce
- ½ teaspoon Worcestershire sauce
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
- Heat olive oil in a large skillet on medium-high heat. Toss in chicken, onion powder, garlic, 1 teaspoon salt, and black pepper. Cook and stir until chicken is no longer pink in the center and the juices run clear, about 7 minutes. Reduce heat to low.
- Whisk chicken broth and flour together in a bowl until well blended. Pour over the chicken in the skillet. Add half the Cheddar cheese, diced tomatoes, cream, butter, hot sauce, and Worcestershire sauce; stir to combine. Continue stirring over medium heat until sauce starts to thicken, about 10 minutes. Stir cooked pasta into skillet.
- Pour chicken-pasta mixture into a glass baking dish. Sprinkle remaining Cheddar cheese on top.
- Bake in the preheated oven until cheese is bubbly and melted, about 15 minutes.
- Top with bread crumbs right before baking if desired.

Perfect weeknight meal, especially for a family dinner. Also, could be a good meal to incorporate more veggies into for kids and adults.
Meh. it’s ok. I made it as written except I used rotel instead of just diced tomatoes and I didn’t have any hot sauce so that was omitted. Maybe I messed up somewhere but I don’t think so and it came out kinda bland. It’s hard to believe that just 1 tsp of hot sauce for the entire dish would’ve made that much difference but I won’t be making it again to find out.
I used Italian diced tomatoes and used both cheddar and Colby jack cheese. This was a very good, super rich, casserole.
I’m not sure if I did something wrong but it was awful. Weird flavor.
Really yummy. I just left it in my big frying pan when I baked it and I only had fire roasted tomatoes so I used that. Delish
Since I’m not that experienced with cooking, it took us a longer than the stated hour to prepare, but it was quite filling, and definitely something to add to our list of things to make again in future
This recipe is easy to make and we had all the ingredients on hand. Seconds were definitely served! I also threw some panko bread crumbs on top for some crunch. Good, cheesy stuff!
I added oregano and Crispy fried onions on top. I did not add hot sauce since I have kids. It has a mild flavor but still tasty.
excellent dish. I used 1/2 Tbsp of Tabasco sauce instead of 1 Tbsp.
My family loved this dish, and we will have plenty of leftovers too. Since we’re not tomato lovers by any stretch, I used tomato sauce instead of diced tomatoes. Some Panko bread crumbs on top gave it a nice crunch. Delicious!
I made this for me and my daughter. I used fresh cherry tomatoes instead of canned tomatoes. We took the left overs to work the next day. We love it.
I topped it with 1 cup of Italian breadcrumbs, although a 1/2 cup probably would’ve sufficed. I made it for my roommates and it was an absolute hit. Definitely recommend this recipe.
I made this for just myself so I cut it in half. I thought it was very good. I think I may have added a bit more cheese than called for but a little extra cheese never hurts! I will make this again.
Great blend of flavors. The only thing I varied was using extra sharp cheddar. The next time I make it I’m going to substitute Chili Paste for the Hot Sauce for a little more bite!
So, so yummy just the way it is. No changes needed.
