Ingredients

  1. 1 (16 ounce) package rotini pasta
  2. 2 tablespoons olive oil
  3. 2 pounds chicken breasts, cut into 1-inch pieces
  4. 1 tablespoon onion powder
  5. 2 cloves garlic, crushed
  6. 1 teaspoon salt
  7. ½ teaspoon ground black pepper
  8. 1 cup chicken broth
  9. ¼ cup all-purpose flour
  10. 1 (16 ounce) package shredded Cheddar cheese, or as desired
  11. 1 (14.5 ounce) can diced tomatoes, drained
  12. ¼ cup heavy whipping cream
  13. 3 tablespoons butter
  14. 1 tablespoon hot sauce
  15. ½ teaspoon Worcestershire sauce

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  3. Heat olive oil in a large skillet on medium-high heat. Toss in chicken, onion powder, garlic, 1 teaspoon salt, and black pepper. Cook and stir until chicken is no longer pink in the center and the juices run clear, about 7 minutes. Reduce heat to low.
  4. Whisk chicken broth and flour together in a bowl until well blended. Pour over the chicken in the skillet. Add half the Cheddar cheese, diced tomatoes, cream, butter, hot sauce, and Worcestershire sauce; stir to combine. Continue stirring over medium heat until sauce starts to thicken, about 10 minutes. Stir cooked pasta into skillet.
  5. Pour chicken-pasta mixture into a glass baking dish. Sprinkle remaining Cheddar cheese on top.
  6. Bake in the preheated oven until cheese is bubbly and melted, about 15 minutes.
  7. Top with bread crumbs right before baking if desired.

Meh. it’s ok. I made it as written except I used rotel instead of just diced tomatoes and I didn’t have any hot sauce so that was omitted. Maybe I messed up somewhere but I don’t think so and it came out kinda bland. It’s hard to believe that just 1 tsp of hot sauce for the entire dish would’ve made that much difference but I won’t be making it again to find out.

I used Italian diced tomatoes and used both cheddar and Colby jack cheese. This was a very good, super rich,casserole.

This recipe is easy to make and we had all the ingredients on hand. Seconds were definitely served! I also threw some panko bread crumbs on top for some crunch. Good, cheesy stuff!

My family loved this dish, and we will have plenty of leftovers too. Since we’re not tomato lovers by any stretch, I used tomato sauce instead of diced tomatoes. Some Panko bread crumbs on top gave it a nice crunch. Delicious!

I topped it with 1 cup of Italian breadcrumbs, although a 1/2 cup probably would’ve sufficed. I made it for my roommates and it was an absolute hit. Definitely recommend this recipe.

Great blend of flavors. The only thing I varied was using extra sharp cheddar. The next time I make it I’m going to substitute Chili Paste for the Hot Sauce for a little more bite!
