I readjusted the original from the outset and instead of 2 breasts I cut them in strips and shook them up with LOTS of HY’s Cajun seasoning so that all strips were well coated. I usually make double recipe thus I stir fry veggies separately somewhat before adding to pot with chicken. Avoiding dairy, I use Oat cream instead. I also use olive oil instead of butter.
Only changes I did was use a red bell pepper instead of green because the store was out of stock, used 1/4 tsp for the ones that said 1/8 because I don’t have a measuring spoon that small, and used 6 mushrooms instead of 4 because they were small. We loved it, hubby wants me to add more mushrooms next time. I would at some point like to try it with chicken thighs because those are cheaper here.
I’ve made this recipe several times for friends, family and everyone loves it. It’s always a hit.
This is one of the best dishes I’ve ever had. It’s one that you think came from a restaurant. I omit the mushrooms simply because my boyfriend doesn’t like them, so I’ve eaten this with and without. I must say, I prefer this without the mushrooms but that’s just us. This recipe is in heavy rotation at our house!
I am making this again for about the 10th time. It is easy and the flavors are great plus it is adaptable to personal taste, but I stick to the recipe itself. Family loves it and guests are impressed by my culinary talent.
Love the recipe!!! I make this for my husband for special occasions, except with shrimp! The only thing I change is I add just a little flour to thicken up the sauce a bit. The flavor this pasta has is amazing!!!!!
Way better than Applebee’s
Great flavors. I would make again but I would put a bit more pasta, half the Cajun seasoning amount and put less bell peppers
I never leave reviews, but I had to for this one! This recipe is fantastic! I’m not a pro cook by any means, but this dish turns out restaurant quality every time, and it’s so easy! My husband and I love it! I usually double the recipe to have leftovers, but I still only use 1 red bell pepper and 1 green bell pepper. That’s enough for us. I also saute the veggies with the chicken a little bit longer than suggested since we like our veggies a little more tender. Just a personal preference. I also use some corn starch + a little water to thicken the sauce. It is great with any kind of pasta. We’ve tried fettuccine, farfalle (my husband’s favorite), penne, and cavatappi. All are delicious. Definitely a great meal to impress some guests. Just add a salad and garlic bread. *chef’s kiss*
Don’t expect it to be Cajun chicken Alfredo. It was easy quick and good. Everyone loved it. I always add more of a kick with more garlic.
Great recipe! Doubled the Cajun seasonings and used half/half cream instead of whipping cream. Super great tasting.
Loved it and pretty easy to make!
I have been making this recipe since it was first introduced and I have to say this is one of my top 5 chicken recipes of all time. Well done Carol!
Very delicious! One of my favorite chicken pasta meals. Nice variety of vegetables and the cream makes a nice smooth sauce.
Really satisfying and full of flavor, this recipe is a perfect winter season dish. I made mine with a little pinch of cayenne pepper to give it a bit of extra kick.
This was very good. I doubled the spice and used half and half as well as squeezed lemon. No mushrooms added since we don’t like them. Will be making this again.
Can substitute chicken with shrimp!
I’ve been making this recipe for years! It’s easy and such a crowd pleaser. I made it often enough for my girls that they say “it smells like home!” Perfect as is, but you can add andouille sausage for a little extra protein and spice. I also like to thicken my sauce up a bit by adding a cornstarch slurry at the end and bringing to a simmer. Add to your bookmarks and enjoy!
Great recipe overall. I did do a couple of things differently. All fresh herbs and fresh lemon juice. No mushroom but added cherry tomatoes. I also added a little pasta water to help the sauce. Very flavorful! Will make again!
I thought this dish tasted pretty good. It had decent flavor. I probably would use fewer peppers next time just because there were quite a bit.
This was Amazing! I added extra Cajun seasoning at the end only cuz we like it like that. My neighbor wanted more mushrooms – so I’ll add more next time. Other than that it was great! Thank you for sharing!
