Buffalo Chicken Sloppy Joes

Certain to become a fast favorite comfort food. I changed the dish from a Rachel Ray recipe by giving it a creamy and cheesy kick. You’ll think about this meal at night. Play around with the recipe if you like. To make it creamier, I added Cheddar and cream cheese. I wanted this meal to be comparable to Buffalo Chicken Dip because I love it so much.

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 2 pounds ground chicken
  3. 1 onion, chopped
  4. 1 tablespoon minced garlic, or to taste
  5. salt and ground black pepper to taste
  6. ¾ cup chicken stock
  7. ¼ cup hot buffalo wing sauce (such as Frank’s® REDHOT Buffalo Wing Sauce), or to taste
  8. 2 tablespoons red wine vinegar
  9. 2 tablespoons brown sugar
  10. 1 tablespoon Worcestershire sauce
  11. 6 ounces Neufchatel cheese, softened
  12. 8 ounces shredded Cheddar cheese, or more to taste
  13. 8 hamburger buns, split
  14. ½ cup crumbled blue cheese

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat and stir in the ground chicken. Cook and stir until the chicken is crumbly, evenly browned, and no longer pink. Stir in the onion, garlic, salt and black pepper; cook until the onion has softened, about 7 to 8 minutes.
  2. Combine chicken stock, Buffalo wing sauce, red wine vinegar, brown sugar, and Worcestershire sauce in a bowl. Pour into the skillet with the chicken and add the Neufchatel and Cheddar cheese; simmer and stir until the cheeses have melted and everything is well combined. Serve on buns, and top with crumbled blue cheese.
  3. You can finish this dish up in the slow cooker after Step 1: just put everything in the slow cooker, start the cooker, and simmer until serving time.

Turned out great! We used shredded chicken but otherwise followed the recipe. Not spicy but you still get a hint of buffalo so kids or people who don’t like spice should be fine!

I made these for my kids to take to school for lunch (they are slightly spoiled and get tired of sandwiches, so I make soups, pastas, etc for them to take in thermoses). I made a few modifications – added an extra couple tablespoons of hot sauce since some reviewers said they could use more, and cut back to one cup (about 2.5 oz) cheddar cheese to make them a little healthier. They turned out great – my kids and I all loved them! A nice change from traditional sloppy joes.

Yummy! I made this in the Instant Pot by cooking the onions and chicken on the Saute function, then stirring in the rest of the ingredients and setting it to Warm. I would recommend omitting the chicken stock if you use the Pot.

I can’t rate this as following the recipe exactly because I altered it a little, by decreasing the amount of cream cheese to 4 oz. and doubling the amount of buffalo sauce. Everything else the same. But with that it was very good and my family loved it. I will make it again.

I love this recipe, but I do make one change and that is adding only 1/2 cup of the chicken stock. Otherwise, it is too loose.

We liked the recipe. I added Colby jack cheese instead of Neufchatel cheese, & also added a block of cream cheese to the recipe. I included 3 chopped jalapenos with the onion. Very happy with this recipe & cannot wait to make this one again. 5 stars from my hubby as well.

This was a quick and easy dinner for my family that I threw into my instant pot to keep warm. I made the recipe mostly as written, I subbed cream cheese for the Neufchatel. As many have said as written this is not a spicy recipe. We love buffalo chicken dip and this was completely missing that flavor.It was still tasty, just needs a few tweaks. If I were to make it again I would cut the brown sugar and up the hot sauce.

11/24/20Cut the amount of onion in half. These were really rich, very good but I think they would be better served on a mini bun as an appetizer or part of a buffet.

Great take on sloppy joes. I used the entire package 8oz of Neufchatel cheese because I knew it would go to waste in my refrigerator if I didn’t use it all and added another splash of red wine vinegar because I love it. This was very tasty and a keeper. Will definitely make this again.

This was tasty, quick, and easy. I like that it gives me a new way to use my ground chicken that I wouldn’t have thought of. I made the recipe as-is but with 1 lb of chicken because that’s all I had. I found the sauce just enough for 1lb so I will double when using 2 lb. Also, the flavor didn’t have enough kick for my taste so I’ll be increasing the buffalo sauce next time and reducing the chicken stock. For these couple of reasons I went with a 4 instead of 5 stars.

Delicious! I only had 1 lb of chicken, but I kept the same amt of sauce ingredients. Changed a couple of things because of what I had. Used a whole cup of chicken broth and subbed in Sambal Oelek for the hot sauce, used reg cream cheese and served it over rotini pasta – loved it!

These were absolutely phenomenal!! My boyfriend pointed at his plate and said, “Okay…from now on, these are our sloppy joes.” I take it he approved as well 🙂 They taste like sloppy joes but with a buffalo kick! I topped mine with lettuce and ranch. We even tried these in a tortilla shell, definitely recommend that! I subbed cream cheese for the Neufchatel as I couldn’t find any at the store! I only used 1 lb of chicken as I was only cooking for 2, but used the same amount of sauce. I added a generous helping of buffalo sauce (maybe 3/4 cup instead of just 1/4 cup) and let the mixture simmer until the meat had soaked up the sauce, about 30 minutes. Will definitely be added into my cookbook and meal rotation!!! Thanks for the amazing recipe.

Really thought the idea of buffalo chicken flavored sloppy joes sounded like so much fun although I wasn’t sure about the Neufchatel cheese or the cheddar. After reading all the reviews I ended up using about 2oz of cream cheese and 1 cup of shredded pepper jack and increasing the hot sauce to taste. We really enjoyed this flavor of these and they were fun, but we’re unlikely to make again as I have a pulled chicken recipe with a similar flavor profile that is more budget friendly.

I found this looking for recipes using ground chicken and I’m so glad I did! After reading some of the previous reviews, I made a few changes. I only had one pound of chicken but I didn’t completely halve the sauce. Now I wish I had because it was more like a dip than a sloppy joe. I did halve the buffalo sauce and it was plenty hot enough. I added chopped celery and carrot in with the onion to reinforce the chicken wing experience and to add more veggies. I did not add as much cheddar as recommended, probably more like 3-4 ounces. To eat, I toasted the buns, sprinkled with blue cheese crumbles, then topped with the sloppy joe mixture. Open face sandwiches. This was delicious! Thanks!
