Ingredients
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 1 tablespoon garlic powder
- 1 tablespoon Montreal steak seasoning
- 1 (3 pound) chuck roast, or more to taste
- ½ cup barbeque sauce
- ¼ cup brown sugar
Instructions
- Preheat a smoker to 275 degrees F (135 degrees C).
- Combine salt, pepper, garlic powder, and steak seasoning in a bowl. Rub mixture evenly over the roast and place in a baking pan.
- Cook roast in the smoker until meat reaches an internal temperature of 165 degrees F (74 degrees C), 4 to 4 1/2 hours. Wrap roast in aluminum foil and continue smoking until meat reaches an internal temperature of 195 degrees F (90 degrees C), about 1 hour more.
- Remove roast from smoker and let sit for 20 minutes. Leave smoker on.
- Cut meat into cubes and return to the baking dish. Add barbeque sauce and brown sugar.
- Smoke meat for 1 1/2 to 2 hours more.

I made this one other time and it was just delicious!! What did everyone use for the baking pan? Aluminum foil pan? And don’t cover it the first time?
A really easy and delicious recipe. The chuck roast worked perfectly. Because you cut this up at the end, I cut the roast in half to cut down on cooking time. I used Sweet Baby Rays BBQ sauce so I also didn’t add the brown sugar as Rays is very sweet. Everyone love it and zero leftovers. Will cook again. Thanks!!!
I did not have a smoker and just made this in the crockpot/slow cooker. Turned out excellent! Included the brown sugar with the other rub ingredients. Put rub on all sides. Put in crockpot and then poured the BBQ sauce on top and cooked on low for 7 hrs. Thank you for the recipe!
This recipe was amazing. I made it on a Traeger a few weeks ago and am making again this weekend. I am not changing a single thing on this recipe. The meat is incredibly tender and delicious hot and I love the cold left overs in a salad. This recipe will be a staple in my home going forward.
