Blue Cheese and Beef Meatballs

For parties or family get-togethers, this rotisserie chicken salad is delicious and easy to prepare. You may easily quadruple this recipe. There are never any leftovers, so don’t be concerned! Serve in pita pockets, on bread, crackers, bagel chips, crostini, or croissants, either warm or cold.

Ingredients

  1. 1 ½ pounds ground beef
  2. 1 cup fresh bread crumbs
  3. 2 eggs
  4. 4 ounces crumbled blue cheese
  5. ½ cup diced onion
  6. ¼ teaspoon ground black pepper
  7. salt to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a jelly roll pan with aluminum foil.
  2. Mix ground beef, bread crumbs, eggs, blue cheese, onion, pepper, and salt together in a bowl; shape into 22 meatballs and arrange onto prepared pan.
  3. Bake meatballs until they are very firm, hot, and grey in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

These were the BEST MEATBALLS EVER according to my two grown boys. I did use a full wedge of blue cheese, just over 4 ounces, and green onions. The blue cheese taste was evident, not lost at all, and they loved the softer texture that it gave the meatballs. I was aiming for “Buffalo meatballs” and I found a recipe on here for “Spicy Meatballs” and I made the sauce to drizzle over these little babies. 4 tbsp buffalo sauce, 4 tbsp margarine, and 2 tbsp of honey. Just enough to add a little heat, but not too much for my 1 1/2 year old grandson who loved them too. We’ll be making them again. Delish!

I was afraid the blue cheese was going to be overpowering…but it wasn’t, it was amazing. It cooked thoroughly in 30 minutes for an average size meatball. These would make a great appetizer of you make them smaller and adjust the cooking time.

Great meatball but a little dry ( might be because I used 93-7 ground beef) Made a mushroom gravy to serve over and it was delicious!

This is amazing! I accidentally used 1/2 ground venison sausage and 1/2 ground venison, but it was still great! The only change I made was adding a little garlic. I served with blue cheese cream sauce, over mashed potatoes, and it was out of this world! I usually hate the blandness of meatballs, but these were so good!

I added 2 large garlic cloves. Also I used kosher salt with ground pepper and put it on top vs inside and it made a nice looking topping after baked. Delicious!

ABSOLUTELY DELICIOUS!!! I adore blue cheese n meatballs so this was a huge winner for me. I made a blue cheese cream sauce with mushrooms n shallots. Perfect combo! This recipe is a def keeper!

If you like blue cheese, you will LOVE these! They were perfect consistency, and just enough blue cheese to really pack a hit. The only suggestion I have is to use green onions. Otherwise, fantastic exactly as written. We enjoyed these on top of smashed red potatoes with a blue cheese gravy.
