For my lactose-intolerant friend, I came up with this quick dish.

Ingredients
- 1 teaspoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- ¾ cup uncooked white rice
- 1 ½ cups low sodium, low fat vegetable broth
- 3 ½ cups canned black beans, drained
- 1 teaspoon ground cumin
- ¼ teaspoon cayenne pepper
Instructions
- Heat oil in a saucepan over medium-high heat. Add onion and garlic; cook and stir until onion has softened, about 4 minutes. Stir in rice to coat; cook and stir for 2 minutes.
- Add vegetable broth and bring to a boil. Cover, reduce to a simmer, and cook until liquid is absorbed, about 20 minutes.
- Stir in beans, cumin, and cayenne; cook until beans are warmed through.

I added jalapeños and red pepper along with the onion to give it more flavor and a little bit of heat. I also added Cajun Andouille sausages. Delicious.

Definitely needed some doctoring up, but it was really good and VERY easy to pull together. (I’ve already had three bowls of it today, lol.) I didn’t have an onion but I did have green onions so used them instead, sautéed the thinly sliced whites in the olive oil with jarred garlic. Since I didn’t have enough onions I made Lipton onion soup and scooped the onions off the top and added to the sautéed onions in the pan, then added the rice to coat, then added one cup chicken bone broth and 1/2 the Lipton onion soup, brought it to a boil and then followed the recipe as stated. I did add some turmeric at the end as well. It needed salt for reals. The first bowl I added a little Sriracha (spelled wrong) and green onions. The second bowl a bit of butter and salt. The third bowl just salt and green onions. I took a lot of liberties for lack of ingredients, but it’s easy to make this dish your own. (Especially if you’re on a strict budget and have to make do with what you have to work with.) Very good!
Made it like the recipe stated. Added beans and canned Mexican cornat the end. Delicious!! Thanks for the easy recipe.
Very good. I added a little salt and pepper to the recipe. I also used already cooked rice so I cut the broth way back

This recipe is ridiculously simple and my picky-a** kids gobbled it up. If that ain’t 5 stars, I don’t know what is. I didn’t even use onion or garlic because of said picky-eater kids, just a pinch of granulated onion and juuuuuust enough cumin for some flavor. Use dried beans that I soaked and the cooked for 6 hours in the crock pot as well. Used chicken stock as well as many users have.
Missing critical factors like seasoning. I sauteed finely chopped celery and carrots as well. Used chicken broth for extra flavour. Otherwise it’s just a bland tasteless thing.
Recipe is great the way it is. I love all the people that leave a bad review and put what they add to it. This is a great base recipe as is… yes there’s a ton of directions you can go and plenty of things you can do from there. This is a very useful recipe. Thank you.
I added ground chorizo. It was really good. I didn’t use cayenne, but didn’t have to with the chorizo. It gave it a nice kick. I also used brown rice instead of white.

Fine recipe as is but I then started making it my own. Separately fried a pound of hamburger with taco seasoning. Added green pepper to the onion. After rice was cooked I added the ground beef, a small can of corn and a small can of diced tomatoes. Served with cheese and sour cream and nacho chips/taco shells.
Love Black Beans and Rice! I put all the ingredients in my Rice Cooker and it came out Fine! No Muss No Fuss,also used lemon ,since I had one halved.
This was great! Awesome, basic rice and beans recipe. For all the people who are whining and complaining that it didn’t have enough flavor, it’s the type of recipe that you can be built upon. The recipe as written, is good and simple, if you want more flavor, you can add a ton of different things to this recipe, but as written, it’s very good. I topped mine with some cheese and sour cream. I’ll definitely be making it again.
So easy, but to make it even simpler I chucked everything in at the front end once the rice/stock was boiling, put the lid on, and turned it off to cook the rice absorption style, then relaxed while it did it’s thing. 5 mins prep, 25 mins slacking off, perfect! I added a bit of fennel and star anise and peas just to mix it up. Will definitely cook again. Singaporean Indian dinner guest loved it.

recipe was super straightforward and easy to follow! didn’t have cumin or vegetable broth so i swapped it out for adobo seasoning (w/ extra garlic powder) and chicken broth from powdered bouillon, recipe still held up & tasted great with pan-fried chicken thigh
I added a few ingredients and also cooked the rice first to cut down on cook time
I used a 1/2 white onion instead of red, I’m feeding just me and my sweetie so I cut back on everything of course. My 1st time making a black bean recipe and it was delicious!
