A wonderful Christmas-time treat that resembles a soft, cake-like citrus cookie. Definitely goes well with a cup of tea!

Total Time: 4 hrs 20 mins
Servings: 8
Yield: 8 sandwiches

Ingredients

  1. 2 pounds skinless, boneless chicken breast halves
  2. 1 small onion, roughly chopped
  3. 5 cloves garlic
  4. 1 ½ cups barbeque sauce (such as KC Masterpiece® Original)
  5. ½ cup apple cider vinegar
  6. salt and ground black pepper to taste
  7. 8 large sesame seed sandwich buns
  8. 8 slices mozzarella cheese

Instructions

  1. Place chicken into the bottom of a slow cooker and cover with water. Cook on High until it is no longer pink in the center and falls apart when pulled, about 4 hours.
  2. Puree onion and garlic in the bowl of a food processor until finely minced.
  3. Remove chicken from the slow cooker and shred meat with 2 forks. Discard cooking water.
  4. Return chicken to the slow cooker. Add pureed onion-garlic mixture, barbeque sauce, vinegar, salt, and pepper. Mix well and cook on High until heated through, about 10 minutes.
  5. Serve on buns with mozzarella cheese.

Overall, this was an okay BBQ chicken sandwich. The biggest complaint was that it was too vinegary. While it was a good addition it was overpowering. I did make 2 small changes, I used a full bottle (18oz) of BBQ sauce and 4 ish lbs of chicken breast because that is what I had on hand.
