Basic Microwave Risotto

Because it is so forgiving, microwave risotto is fantastic because nothing is lost if you neglect to cook it for a half-hour. Additionally, it’s a fantastic recipe for clearing out the refrigerator, using your imagination, and bouncing five checks. It also reheats well. The butter can be replaced with margarine or olive oil, and the wine can be swapped out with apple juice or white grape juice.

Ingredients

  1. 3 tablespoons butter
  2. 1 clove garlic, minced
  3. 1 onion, chopped
  4. 1 ½ cups vegetable broth
  5. 1 cup uncooked Arborio rice
  6. ¾ cup white wine
  7. ¼ cup grated Parmesan cheese

Instructions

  1. In a 3 quart, microwave safe casserole dish combine butter, garlic and onion. Place dish in microwave and cook on high for 3 minutes.
  2. Place vegetable broth in a microwave safe dish. Heat on microwave until the broth is hot but not boiling (approximately 2 minutes).
  3. Stir the rice and broth into the casserole dish with the onion, butter and garlic mixture. Cover the dish tightly and cook on high for 6 minutes.
  4. Stir wine into the rice. Cook on high for 10 minutes more. Most of the liquid should boil off. Stir the cheese into the rice and serve.

Okay, I am being really time efficient today so I cooked this in basically two steps. I sautéed the butter, onions and garlic. It took 4 minutes since my butter was straight out of the refrigerator. I then added everything else to my glass casserole dish and set the microwave on simmer for 23 minutes. Each person can add their own cheese to suit their taste. My dish is a 2 quart Fire king. It worked just fine. Not quite as good as traditional but when your life is busy, simplify.

This recipe turned out very well. I added about 1-2 Tbsp of half and half (didn’t have cream) near the end and it required about 2 extra minutes cooking time in my microwave (I added the half and half when I checked it and decided it needed a bit more time). I also used a bit more garlic just because that’s how my husband and I like it. My husband had it like that and I zested a bit of lemon and squeezed some lemon juice in mine for brightness. I honestly did not think microwave risotto would turn out so delicious! I thought it would be such a fail, and was so pleasantly surprised!!

I used a lower proportion of wine, and ended up adding a bit more liquid and a couple more minutes. I used someone’s suggestion of adding a bit of cream to finish. A nice and easy side dish with fish

My girls really enjoyed this and I will definitely make it again. I didn’t have Arborio rice so I used Jasmine rice and it turned out really well. I read that Jasmine rice doesn’t absorb as much as Arborio so I added more and then ended up adding more stock. I’m not sure the exact ratio I ended up with but it turned out great and it was eaten up very quickly. I will try it with Arborio rice next and see what the difference is.

I did not have parmesan cheese, so I used a few ounces of gouda. It was creamy and tasty! I could not tell the difference between this microwave texture and the stovetop versions I have made before.

This was creamy and delicious. I sauteed the onion and garlic with a pint of mushrooms, then added the vegetable broth to that, then added the rice and moved it all to the casserole dish. Instead of 3/4 cup of wine, I used 1/2 cup wine and 1/2 cup heavy cream to make it nice and creamy. My mom couldn’t believe I made it in the microwave and wanted the recipe. Score! Have tried this recipe several times. Because I do not have a tight fitting cover I have adjusted some amounts and cooking time. I use 2 cups of veggie broth and microwave for 10 minutes. Keep the wine about the same and add a couple of minutes to the cooking time. Add the cheese and add 1/4 to 1/2 cup of heavy cream. Think the cream makes this dish almost as good as the one that takes stirring and stirring. Drasaid, thank you for giving your recipe.

I think I could have cooked the rice for a little bit longer and put a little less wine in and add mushrooms and it would be better but for microwave risotto it was fantastic!

I have been on Allrecipes for years. This is one of the best recipes I have tried. I am not a regular rice eater and have never tried risotto. But I had some arborio rice in my cupboard to try sometime because I listen to Food Network alot and they make nice looking dishes with it. I was so surprised by how good this was. I also tried the Quick Chicken Piccata on this site with it. This is one of the best meals I have had in a long time, and I am always cooking and trying out new recipes. If you haven’t tried this do it!
