Avocado Breakfast Sandwich

For a fantastic breakfast that tastes like it came from a restaurant, make this egg and avocado sandwich! It is quick, simple, and delectable. What makes this sandwich stand out and gives it a distinctive flavor is the sliced avocado. This sandwich contains a ton of protein and will keep you filled until lunch.

Ingredients

  1. 1 tablespoon olive oil
  2. 2 large eggs
  3. salt and ground black pepper to taste
  4. 1 tablespoon butter, softened
  5. 2 slices Italian bread
  6. 1 ounce Swiss cheese, sliced
  7. 1 ounce Cheddar cheese, sliced
  8. ½ ripe avocado, sliced

Instructions

  1. Heat olive oil in a skillet over medium heat. Crack eggs into skillet; cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.
  2. Spread butter onto 1 side of each bread slice.
  3. Heat a skillet over medium heat. Lay bread slices in the hot skillet, butter-side down. Quickly layer Swiss cheese, 1 fried egg, Cheddar cheese, 1 fried egg, avocado, and remaining bread slice, butter-side up. Carefully flip sandwich to grill other side until golden brown, 3 to 4 minutes.
  4. Remove sandwich from skillet and cut in half.
  5. Double recipe to make two sandwiches, which would increase avocado to one full avocado versus a half. You can also use one full avocado on one sandwich if you are like me and love avocados!
  6. Substitute sourdough bread for the Italian bread, if desired. American cheese can be used in place of Cheddar cheese.

Good concept but a little bland. I agree needs something to make it pop. And very messy to eat so next time – when experimenting with seasonings – will slightly mash the avocado to make a better “bed” for the egg. I like this idea! Will make again with some tweaks. Thanks Tricia for some new breakfast inspiration.

The recipe is great but I made a couple changes for our tastes. I changed to only 1 egg and I added a strip of thick bacon cut in half so there were 2 rows of bacon. When removing the fried egg from the pan I placed it on the cooked bacon so it was easy to pickup and put on top of the Swiss cheese. Delicious breakfast and so easy to make.

i used an English muffin instead of bread, which wasn’t the greatest idea, and its hard to cut/eat, but still very tasty and will try again with whole grain bread, thx: didn’t dictate how eggs should cooked, started w/ sunny side up, then turned them over, and only 1 slice of cheese!!

Christopher thought it was bland. Next time add spinach. Used Mexican 3 cheese and mozzarella. Try it with the cheddar

Wow! That was good stuff!!! Hard to find good breakfast recipes for 1. Only had swiss cheese and whole wheat bread, but still delicious! I never realized avocado would go so good in an egg and cheese sandwich.

I did it open faced to reduce bread amount and used sourdough. Delicious and the family loves it.
