Ingredients
- 1 tablespoon olive oil
- 2 large eggs
- salt and ground black pepper to taste
- 1 tablespoon butter, softened
- 2 slices Italian bread
- 1 ounce Swiss cheese, sliced
- 1 ounce Cheddar cheese, sliced
- ½ ripe avocado, sliced
Instructions
- Heat olive oil in a skillet over medium heat. Crack eggs into skillet; cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.
- Spread butter onto 1 side of each bread slice.
- Heat a skillet over medium heat. Lay bread slices in the hot skillet, butter-side down. Quickly layer Swiss cheese, 1 fried egg, Cheddar cheese, 1 fried egg, avocado, and remaining bread slice, butter-side up. Carefully flip sandwich to grill other side until golden brown, 3 to 4 minutes.
- Remove sandwich from skillet and cut in half.
- Double recipe to make two sandwiches, which would increase avocado to one full avocado versus a half. You can also use one full avocado on one sandwich if you are like me and love avocados!
- Substitute sourdough bread for the Italian bread, if desired. American cheese can be used in place of Cheddar cheese.
Reviews
A lovely breakfast! I added some freshly squeezed lime to the avocado and was delish!
This was awesome and easy to make. As long as you have the right ingredients, this is phenomenal! (We added some turkey; which is def a recommend!!!)
Simple yet tasty
Good concept but a little bland. I agree needs something to make it pop. And very messy to eat so next time – when experimenting with seasonings – will slightly mash the avocado to make a better “bed” for the egg. I like this idea! Will make again with some tweaks. Thanks Tricia for some new breakfast inspiration.
What a hit for our Easter Sunday breakfast! Easy to make as directed, If made for just husband and I, would use only one egg.
I usually don’t like avocado, but this sandwich tastes delicious. I only had mozarela cheese, it’s what I used.
Loved it! The teenager loves it as well. I’ve made it with one and two eggs and used whatever cheese is in the fridge. Also another great way to eat avocado. Thanks for the recipe!!
The recipe is great but I made a couple changes for our tastes. I changed to only 1 egg and I added a strip of thick bacon cut in half so there were 2 rows of bacon. When removing the fried egg from the pan I placed it on the cooked bacon so it was easy to pickup and put on top of the Swiss cheese. Delicious breakfast and so easy to make.
Excellent sandwich and filling as well! The subtle blend of flavors made this 5-star restaurant possibility!
i used an English muffin instead of bread, which wasn’t the greatest idea, and its hard to cut/eat, but still very tasty and will try again with whole grain bread, thx: didn’t dictate how eggs should cooked, started w/ sunny side up, then turned them over, and only 1 slice of cheese!!
Made the eggs over easy, and substituted white cheddar and muenster cheeses. Also used white bread. Came out delicious, if a bit messy to flip and to eat!
I made this according to the recipe and my wife and I loved it!..I just found a great quick breakfast before work.
Great recipe.
Christopher thought it was bland. Next time add spinach. Used Mexican 3 cheese and mozzarella. Try it with the cheddar
This recipe is very versatile, I added bacon but sausage would be good. Also gave people the option of cheddar instead of swiss
Having been sick I didn’t feel like going out to eat or to the grocery store. I was getting my appetite back so I happened upon this recipe. No Italian bread so I substituted honey oat…it was great!! Five stars in my book!!!!!
Skip going out for breakfast! This is awesome! I did mash up my avocado with some garlic and onion powder. Otherwise I made it as written.
Really good. I added sliced tomato with a side of fresh grapes and sliced apple.
Used Muenster cheese instead of cheddar because my kids aren’t bug fans. It turned out great and I got two thumbs up! Will definitely be making this again.
Wow! That was good stuff!!! Hard to find good breakfast recipes for 1. Only had swiss cheese and whole wheat bread, but still delicious! I never realized avocado would go so good in an egg and cheese sandwich.
I did it open faced to reduce bread amount and used sourdough. Delicious and the family loves it.
