This baked asparagus casserole with eggs consists of bread crumbs, chopped eggs, asparagus, and a straightforward white sauce composed of butter, flour, and milk.

Ingredients

  1. 2 teaspoons butter
  2. 4 tablespoons all-purpose flour
  3. 1 ½ cups milk
  4. 1 teaspoon salt
  5. ¼ teaspoon ground black pepper
  6. ½ cup dry bread crumbs, browned in butter
  7. 20 asparagus tips
  8. 5 hard-boiled eggs, chopped

Instructions

  1. To make the white sauce: Melt butter in a small skillet over medium-low heat; stir in flour, then milk. Cook until thickened and season with salt and pepper.
  2. To make the casserole: Spread 1/2 of browned bread crumbs in the bottom of a 9×13-inch baking dish. Add layers of asparagus and chopped egg, alternately. Pour white sauce over all and top with remaining bread crumbs.
  3. Bake in the preheated oven for 30 minutes.

4.11.20 No oven temperature was listed, so I baked at 350ºF for 30 minutes which worked out well. This made a very nice white sauce, and I used thicker asparagus, rather than the pencil-thin type that you often find. I had some leftover browned butter in the fridge, so I heated it up in the microwave, and stirred a little bit into my plain panko bread crumbs (used a few more bread crumbs that listed in the recipe). This was a tasty Saturday lunch, but I can see this being an excellent choice for brunch, or even dinner. Served over buttered toast points with a fresh orange, and really enjoyed it. Definitely wouldn’t hesitate to make this again. Good recipe, thanks for sharing.

I put some kick in the sauce by adding cheese, smoke, worcheshire and terrayki. It was still kinda bland. I think the 9×13 dish is too large. I only had one layer. Might have been two with an 8×8. This may have eliminated some of the egg getting rubbery by having the food packed tighter. I added bacon pieced to the top because I had some leftover. Glad I did. Also dried onion. Didn’t really need the bread crumb bottom but needed more sauce. Would not make again. I’m sure I could find a better recipe. Sorry.

I tried this last evening. The recipe did not state the oven temp. so I went with a 325* temp. I didn’t care for the presentation as layed out here. I found it difficult to serve as such. The flavor was great with the combined ingrediants but I will shift the recipe a bit next time. Also, I don’t like a white sauce with such a high calorie/fat count so will adjust that too. All in all it really tased good. My famly really liked the flavor.

It’s an interesting way to serve asparagus, but the hard boiled eggs kind of overpower the dish. The white sauce could also use a little bit more of a kick to it. The salt and pepper seems to compliment the eggs more then the asparagus.

I have recipe very similiar to this! if this recipe is half as good as mine then it deserves a 10!! I have served it often and always gotten rave reviews!! great with ham, or along side a thanksgiving feast!!

I made this recipe tonight for my parents. There were no leftovers! My parents and I all thought it was very good– it would be especially good as a breakfast casserole. By the way, I couldn’t find an oven temperature listed, so I put it in at 275 for 30 minutes. But I rate my recipes by whether or not I think I would get an immediate proposal of marriage if I served it to a date. It was very good, but probably not worthy of a marriage proposal.
