Asian Zucchini-and-Chicken Burgers

These juicy, savory burgers are delicious! Although they detest zucchini, my family adores these burgers. You cannot even tell there is zucchini in these once they are cooked! The ideal method to utilize the garden’s abundance while sneaking additional vegetables into my family’s diet. Add a spear of dill pickles on the side and serve.

Ingredients

  1. 1 pound ground chicken
  2. 2 cups shredded zucchini, squeezed dry
  3. ½ cup chopped green onions
  4. ½ cup bread crumbs
  5. 2 teaspoons Asian chile paste (such as sambal oelek)
  6. 1 teaspoon sesame oil
  7. 1 teaspoon garlic powder
  8. 1 teaspoon red pepper flakes
  9. ½ teaspoon fish sauce
  10. ½ teaspoon ground ginger
  11. ½ teaspoon ground black pepper
  12. ½ teaspoon salt
  13. ¼ cup mayonnaise
  14. 1 tablespoon chile-garlic sauce (such as Sriracha®)
  15. 2 teaspoons prepared yellow mustard
  16. 1 teaspoon sesame oil
  17. 1 teaspoon lemon juice
  18. 1 teaspoon ground black pepper
  19. 4 hamburger buns – split, toasted and buttered
  20. 4 lettuce leaves, or to taste
  21. 4 tomato slices, or to taste
  22. 4 red onion slices, or to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  2. Mix ground chicken, zucchini, green onions, bread crumbs, chile paste, 1 teaspoon sesame oil, garlic powder, red pepper flakes, fish sauce, ground ginger, 1/2 teaspoon black pepper, and salt in a large bowl. Form into 4 patties and place on prepared baking sheet.
  3. Bake in preheated oven for 10 minutes, flip, and continue baking until no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  4. Whisk mayonnaise, chile-garlic sauce, mustard, 1 teaspoon sesame oil, lemon juice, and 1 teaspoon pepper together in a bowl.
  5. Spread sauce onto cut sides of hamburger buns. Stack lettuce, tomato, and onion onto one side of each bun. Top vegetables with a burger and complete sandwiches with remaining bun halves.
  6. Chicken burgers tend to be quite loose prior to cooking, but don’t compensate by adding extra bread crumbs. I like to form them in my hands and place on wax paper until I am ready to cook them.

We felt these actually lacked in flavor. The only thing I changed was leaving the sesame oil out of the sauce(I’m the only one that had any). I did not squeeze the zucchini out and cooked them on our foreman grill. They were very moist which was great. I wanted to love these but none of us did.

These were delicious, but very spicy! I halved the spice in the burger patties, but made the sauce full spice. I’m not sure how spicy the burger was, because my mouth was on fire from the sauce! Next time I will cut back on the spice.

Really really good. I know it’s a lot of ingredients but so worth it. If kids are eating these be aware the sauce is spicy. We have a mixed family of spicy lovers. Half of us like spicy and half do not. So we made the sauce as is and halved it. One half was as is and the other half we added more mayo to in order to take away most of the heat for the little ones. Goes great with applesauce on the side. We all enjoyed these a lot.

My family loved these. I made a couple small changes to the patties, though: 1 tsp sriracha instead of chili paste and 1 pinch red pepper flakes. It was plenty of heat for us.

Too much heat. Next time I will go with half the sambel oelek and only half a teaspoon of pepper flakes. Otherwise good flavor. Didn’t use breadcrumbs and it held just fine.

i left out half of the zucchini it was still difficult to form the burgers.. i left out the red pepper flakes and still found the heat to be overpowering..
