Ingredients
- 2 cups uncooked white rice
- 1 tablespoon butter
- 2 skinless, boneless chicken breast halves – cubed
- salt to taste
- 2 eggs, beaten
- ¾ cup sliced mushrooms
- 2 green onions, chopped
- 1 tablespoon soy sauce, or to taste
Instructions
- In a saucepan bring 4 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- Heat butter in a large skillet over medium-high heat. Brown chicken in butter and season with salt to taste. Set chicken aside.
- Transfer cooked rice to the skillet in which the chicken was cooked, stirring to brown.
- In a separate skillet, scramble eggs.
- To the rice add chicken, mushrooms, green onions, eggs and soy sauce to taste.

I added to the soy sauce some oyster sauce to get that Asian taste more and some frozen peas and carrots. Yum!!

Didn’t have all ingredients but it was delicious.
I put in a bag of frozen mixed veggies and chopped yellow onions instead of mushrooms and green onions. Turned out awesome.
Grilled the chicken, cubed. I used 3 cups cooked rice instead. Sauté garlic and onion then rice. Used red pepper flakes, ginger in addition to seasoning. This has a lot of possibilities!
I added yellow peppers to this recipe and LOVED IT definitely would recommend!!! Tasted spectacular although next time i would add more soy suace!!!!!!!

I had to add another TBSP of Soy Sauce but it came out so good.
I added some red peppers, onions, chives, and sesame oil and it was delicious and easy. I will definitely make it again.
I added my own seasonings to it separate from what this says to do but it turned out AMAZING and my very outspoken / opinionated daughter LOVED it!

I cut the recipe in half and made a few changes based on what I had and what I like. I used some leftover Key West Chicken from last night and cut it into tiny little pieces. (It’s actually better in this recipe than it was last night.) I set it aside. I browned the rice in the butter and very little sesame oil. Then I added some red pepper, about 4 green onions, and the chicken and stir-fried a few minutes before adding 2 beaten eggs atop the whole thing. I stirred until the eggs were done and added just a very little lite soy sauce. I finished by adding some canned LeSueur green peas. This is my first time making something like this and I love it!
Easy and good. But a little bland. Make it your own, by inserting extra veggies. I choose thawed peas and finely chopped red pepper. I would suggest adding a 3rd egg based on the volume of rice. I also added more soya sauce, but that may be just my taste.
Yum! I made this using the veggies that I had on hand – snow peas and frozen diced carrots. It was so good and just what I was craving.
A basic fried rice recipe that allows for substitutions. I used broccoli and bean sprouts instead of peas for the veggies. I would recommend this as a quick week night meal.
Pretty good base recipe. I 86’d the rice and replaced it with frozen peas. Substituted coconut oil for the butter to make it dairy free. Pretty tasty!
This was great. I did add more soy sauce than called for. 2 1/2 instead of 1 tbsp but just in general it is a really easy recipe, especially if you stick the rice in the rice cooker first and then just toss it into the skillet with the cooked chicken to mix all together.
I too had to put my own spin on this since I rarely follow an exact recipe. I did cook my rice the day before like others. I also put about 1/4 cup of frozen mixed vegetables and chopped bell pepper in skillet as the chicken was finishing cooking. We also like more soy sauce. Like someone else said there is not really a wrong way to cook this. I had planned to post a picture but my kids had it eat up before I could get one!
Stayed pretty true to the recipe added a few diff. veggies but overall spot on, and I have to say it was great. Boyfriend really liked it so it’s a success to me. Smelt great, tasted better, looked good..(going to keep experimenting and adding diff things to perfect it so 4 stars 🙂
