I quickly made this soup to use up some of the kale I had frozen for the winter and to have something nutritious to bring to work for lunch this week. It turned out pretty well!

Ingredients

  1. 3 pounds corned beef brisket
  2. ¼ cup brown sugar

Instructions

  1. Preheat oven to 270 degrees F (132 degrees C).
  2. Rinse corned beef in running water to remove about 1/2 of the salt and trim away any fat. Place corned beef in a baking dish and spread a 1/4-inch layer brown sugar over beef. Cover the baking dish with aluminum foil.
  3. Bake in the preheated oven until an internal temperature of 145 degrees F (65 degrees C) is reached, about 2 hours.

This was super simple and the flavor was good but the cook time is off. My brisket was right at 3 pounds and it took 3 1/2 hours. Allow extra cook time and you have a winner.
