Whole30 Crispy Chicken Strips

  4.6 – 17 reviews  • Gluten Free
These crispy chicken strips taste super-fancy, but the whole recipe (including the dipping sauce) comes together so easily, it can be an everyday meal. The dip is based on a Spanish romesco sauce and is packed with robust flavor.

Yield: 2 servings

Ingredients

  1. 1 cup salted roasted almonds
  2. 1/2 cup fresh parsley leaves
  3. 1 tablespoon garlic powder
  4. 1 tablespoon sesame seeds
  5. 1 tablespoon fresh thyme leaves
  6. Kosher salt
  7. 1 pound chicken tenders
  8. One 12-ounce jar roasted red peppers (1 1/2 cups), roughly chopped
  9. 1/3 cup extra-virgin olive oil
  10. 3 tablespoons tomato paste

Instructions

  1. Preheat the broiler. Set a wire rack on a baking sheet.
  2. Pulse together the almonds, parsley, garlic powder, sesame seeds, thyme and 1 tablespoon salt in a food processor until the mixture resembles breadcrumbs and no large pieces of almond are left. Transfer 3/4 cup to a shallow bowl for breading; reserve the remaining almond mixture in the food processor.
  3. Press the chicken into the almond mixture until evenly coated on all sides. Put on the prepared baking sheet and broil, flipping halfway through, until the chicken is cooked through and the coating is crunchy and deep golden brown, 8 to 10 minutes.
  4. Meanwhile, pulse the red peppers, olive oil and tomato paste with the remaining almond mixture in the food processor until a smooth and vibrant orange. Serve alongside the chicken tenders.

Really great and perfect for a Whole30 menu.  Reduce salt to 1t.  We make this often now:). Thanks..

It was delicious, I will definitely be making this recipe again.

I love this recipe! I’ve made it 6 or 7 times now. So flavorful.

Delicious and super easy. My kids devoured them in no time! They were a little too salty – I would cut the salt next time in the chicken coating mixture

FABULOUS!!! Fresh herbs really make the difference! The dipping sauce, I eat by the spoonful by itself! It’s so savory and tasty, I plan on putting it on my omelette tomorrow morning too! I love the almond flavor and texture in the breading. I did use a little less oil and a little more almonds.

I was disappointed. The chicken was ok, but the sauce lacked depth of flavor.

So delicious! Creative way to not use bread crumbs.

Loved the chicken and the sauce. I had a humongous spoonful of it, it was that good. I would eat this over chicken fingers any day. The almond parsley “breading” added so much flavor.
