Ingredients

  1. One 3- to 5-pound pork butt
  2. BBQ Rub, recipe follows
  3. 4 cups apple cider vinegar
  4. 2 cups cooked macaroni
  5. 8 ounces Cheese Sauce, recipe follows
  6. 2 ounces BBQ Sauce, recipe follows
  7. 1 ounce smoked Cheddar, shredded
  8. 1/2 green onion, chopped
  9. 1/4 cup ancho chile powder
  10. 1/4 cup bourbon paprika
  11. 1/4 cup salt
  12. 1/4 cup granulated sugar
  13. 3 tablespoons brown sugar
  14. 1 1/2 tablespoons crushed red pepper
  15. 3/4 teaspoon ground cumin
  16. 3/4 teaspoon garlic powder
  17. 3/4 teaspoon onion powder
  18. 1/8 teaspoon ground cinnamon
  19. 1/8 teaspoon ground ginger
  20. 2 pounds brown sugar
  21. 4 cups ketchup
  22. 1 cup red wine vinegar
  23. 1/4 cup dry mustard
  24. 1/4 cup hot sauce
  25. 4 teaspoons bourbon paprika
  26. 4 teaspoons ground black pepper
  27. 4 teaspoons salt
  28. 2 dashes Worcestershire sauce
  29. 1 stick (8 tablespoons) butter
  30. 1/4 cup all-purpose flour
  31. 4 cups milk
  32. 2 cups heavy cream
  33. 1 tablespoon salt
  34. 1/2 tablespoon black pepper
  35. 2 pounds shredded white Cheddar

Instructions

  1. Preheat the oven to 250 degrees F.
  2. Rub the pork with the BBQ Rub, then place in a pan with the vinegar. Cover with plastic and foil, then roast for 3 to 4 hours. Let cool, then remove the fat cap and bone and shred the pork.
  3. Heat 3 ounces pulled pork. Place the macaroni and Cheese Sauce in a saucepan and cook on medium heat until hot. Place the macaroni and cheese in a bowl, then top with the pork, BBQ sauce, smoked Cheddar and green onion. (Reserve the remaining ingredients for more servings or another use.)
  4. Combine the chile powder, paprika, salt, granulated sugar, brown sugar, crushed red pepper, cumin, garlic powder, onion powder, cinnamon and ginger in a bowl.
  5. Place the brown sugar and ketchup in a bowl and mix well. Add the vinegar, mustard, hot sauce, paprika, pepper, salt, Worcestershire and 1 cup water and continue to mix until well blended and the sugar has dissolved.
  6. Melt the butter in a pot, then add the flour, stirring until smooth. Cook for 3 minutes. Add the milk, cream, salt and pepper. Cook on medium heat, stirring often, until thickened. Turn off the heat and add the cheese. Stir until melted.
