Ingredients

  1. 2 large egg yolks
  2. 2 cups cold seltzer
  3. 2 cups cake flour
  4. 1/4 cup ice cubes

Instructions

  1. Mix the egg yolks and seltzer together with a whisk or a pair of chopsticks until smooth. Drop the flour in all at once, then mix, stopping when there are still small lumps in the batter. Stir in the ice cubes.
  2. Dip your chosen tempura ingredients in the batter, and fry until crispy and pale gold in color.

I used sprite instead of seltzer and added a tablespoon of fish sauce. Gives an ever so slight sweet and umami flavor.
