Mini Lobster Rolls

Ingredients

  1. 1/4 cup mayonnaise
  2. 1 teaspoon lemon zest, plus 1 1/2 tablespoons lemon juice
  3. 1 tablespoon chopped fresh tarragon
  4. 1 stalk celery with the tender leaves, chopped
  5. 1 teaspoon capers, rinsed and chopped
  6. Kosher salt
  7. 8 ounces cooked lobster meat, chopped (from about a 2-pound lobster)
  8. 3 split-top hot dog buns, split
  9. 1/2 cup baby arugula

Instructions

  1. In a medium bowl, combine the mayonnaise, lemon zest and juice, tarragon, celery, capers and 1/4 teaspoon salt. Mix together with a rubber spatula until everything is incorporated. Fold in the lobster meat.
  2. Place a small amount of arugula on each bun. Top with the lobster salad.

Yummy casual Valentines dinner . I was able to buy brioche hotdog buns. . I toasted  them and it was very delicious . Make ahead no dishes to wash .

Made these for a holiday party (about 4x the recipe!) and it was a huge hit! Really added a sense of occasion and it was really simple. I did not have the lobster meat removed by the fishmonger (which added to the work with a slight amount of messy drama) but once I got the hang of dismantling them, it was pretty easy.  Would definitely recommend!
