Buttery Lobster Rolls For Your Baby

Ingredients

  1. Two 1 1/2-pound lobsters
  2. 1 to 2 teaspoons minced fresh tarragon
  3. 2 stalks celery, finely diced
  4. 2 lemons, 1 juiced plus 1 wedged for garnish
  5. 1/4 to 1/2 cup mayonnaise
  6. Salt and freshly cracked black pepper
  7. 4 New England split-top rolls, or potato hot dog buns
  8. Salted butter, softened to toast buns
  9. 1 tablespoon chopped chives, for garnish

Instructions

  1. Steam the lobster in 2 inches of boiling water until bright pink, 8 to 10 minutes. Immediately shock in an ice bath, and then remove the tail and claw meat. Chop and reserve. 
  2. Mix the lobster meat, tarragon, celery and lemon juice together in a medium bowl. Fold in the mayonnaise and season with salt and pepper. Brush the outside of each roll with some butter and griddle or toast until golden brown. Fill each roll with the lobster salad and garnish with the chives. Serve immediately with lemon wedges on the side.

Great show and recipe. The lobster rolls looked so good that I had to try it immediately. Since shrimp was in the frig I did a little substituting. It was amazing. I will definitely be using lobster the next time.

Great recipe! However don’t forget to remove the intestinal tract (full of yummy lobster poop from the tail before you chop it. I hope Jeff and his wife enjoyed that extra bit of protein in his recipe. All New Englanders who watched this were thinking the same thing.

Really nice combinations for a terrific Sunday sandwich while watching football! It’s the simple recipes, like this, that sometimes make for the best eats. I did have to make just one addition, though – cayenne pepper! Not necessary, but I wanted the kick! Ha!

Great recipe and very easy to follow. The lobster salad was creamy and nutty. The taste of the mayo, lemon and tarragon were present, but not overpowered the lobster meat by any means. Just added a dash of hot sauce to give it some kick. Delicious!!!
