Thai Cucumber Lemonade

Ingredients

  1. 1 cup sugar
  2. 1 cup water
  3. 3 sprigs cilantro
  4. 3 sprigs mint
  5. 3 sprigs basil
  6. 1/4 stalk crushed lemongrass
  7. 1 large cucumber, peeled and diced
  8. 2 cups water
  9. 1 lemon, juiced
  10. 2 ounces Infused Simple Syrup
  11. 2 ounces Cucumber Juice
  12. 1 1/2 ounces citrus vodka
  13. Ice
  14. Cucumber stick, for garnish
  15. Lemon slice, for garnish

Instructions

  1. Infused Simple Syrup: In a saucepan over medium heat, combine the sugar, water, cilantro, mint, basil, and crushed lemongrass. Slowly bring to a simmer and cook until the sugar is dissolved. Take off heat and let herbs steep until the liquid is cool. Strain into a glass or a bowl and reserve.
  2. Cucumber Juice: Add the cucumber to a blender with 2 cups of water. Blend on high until fully liquefied, then pour through a fine strainer and reserve.
  3. Drink: Add the drink ingredients to each pint glass filled with ice. Stir and garnish each glass with a cucumber stick and a lemon slice.

This was amazing! I followed the recipe completely and just loved the flavor. It was a little sweet for me so I cut back on the infused simple syrup in my glass but cannot wait to make this for guests!

The idea of using herbs in cocktails is so exciting. I made this drink without the mint or lemon grass. Using just the cilantro and basil gave it a very exotic flavor.
