Spiked Strawberry Jalapeño Lemonade

This drink is a little bit fruity, a little bit sweet, pretty spicy and very refreshing. It also has a wonderful color. With all this to recommend it, it’s the perfect drink to serve at a gathering.

Ingredients

  1. 2 ounces Strawberry Jalapeño Syrup, recipe follows
  2. 2 ounces blanco tequila
  3. 4 to 6 ounces bottled sparkling lemonade
  4. 1 thinly sliced lemon wheel
  5. 1 pound strawberries, hulled and halved
  6. 1 large jalapeño, sliced thin
  7. 1 cup lemon juice
  8. 2/3 cup sugar

Instructions

  1. Fill a 12-ounce glass with ice. Add the Strawberry Jalapeño Syrup and tequila. Stir gently with a spoon. Top with the sparkling lemonade. Garnish the glass with the lemon wheel and enjoy.
  2. Add the strawberries, jalapeño, lemon juice and sugar to a small saucepan. Place over medium heat and bring to a simmer, stirring to help dissolve the sugar. Let simmer for 2 to 3 minutes, then remove from the heat. Puree using a hand blender. Set aside and let cool for 30 minutes.

Perfect summer cocktail! I had some raspberries in the fridge that were 1-2 days from going bad so I subbed those for the strawberries. The syrup wasn’t really spicy enough for me (I like spice) so I muddled another ring of fresh jalapeño with the syrup when I mixed the drink. Refreshing and fun! You could easily make a big batch for a crowd.
