Raspberry Lemonade

Ingredients

  1. 3/4 cup fresh or thawed frozen raspberries
  2. 9 cups water
  3. 2 cups freshly squeezed lemon juice (about 12 lemons)
  4. 2 cups superfine sugar
  5. Ice

Instructions

  1. Puree the raspberries in a blender and strain through a fine sieve into a pitcher. Add the remaining ingredients and whisk together until the sugar dissolves. Serve over ice.

This is very good as written. That being said, after making one batch exactly as written, I decided it may not be enough for my daughter’s lemonade stand so I made another batch. When making the second batch I just combined it with the first, but I thought I would like it not as sweet and a bit more tart so I added only 1 3/4 cups sugar and the zest of 3 lemons and threw it all in my vitamix and blended and it was the perfect amount of sweet and tart for our liking.

Excellent recipe and wonderful flavour. I live in the West Indies and our lemons are a different variety and the juice is not as strong as lemons in America so I used 4 cups. I took some of the juice and made ice cubes for serving to prevent diluting the drink. Worked a charm.

Loved it, though I modified it a bit. I used splenda instead of sugar, used only 6 lemons (though I still got about 1 & 1/4 cup of lemon juice) and I used a full cup of raspberries. Turned out to be excellent.

I used this recipe for my daughter’s 1st birthday party. My guests are still talking about it. I had to increase the ingredient list x5 for my # of guests. After increasing it, I had to add one addt’l cup of sugar to make the drink perfect.

I will definitely use this recipe over and over!
