This is a common side dish in Chile that is sometimes served with other foods or is simply eaten with bread. This is the topping I prefer to use on Chilean empanadas.

Ingredients

  1. ½ cup chopped cilantro
  2. ¼ cup olive oil
  3. ¼ cup red wine vinegar
  4. 1 tomato, chopped
  5. 1 small onion, chopped
  6. 1 lemon, juiced
  7. 2 chile peppers, seeded and chopped
  8. 2 tablespoons minced garlic
  9. salt and pepper to taste

Instructions

  1. Combine cilantro, olive oil, red wine vinegar, tomato, onion, lemon juice, chile peppers, tomato, garlic, salt, and pepper in a bowl; stir to combine.
  2. Keep in mind that everything can be adjusted to your liking. I recommend you add a bunch of chopped parsley if you have it, and a jalapeno pepper for extra spice.
