This is a common side dish in Chile that is sometimes served with other foods or is simply eaten with bread. This is the topping I prefer to use on Chilean empanadas.

Ingredients
- ½ cup chopped cilantro
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 tomato, chopped
- 1 small onion, chopped
- 1 lemon, juiced
- 2 chile peppers, seeded and chopped
- 2 tablespoons minced garlic
- salt and pepper to taste
Instructions
- Combine cilantro, olive oil, red wine vinegar, tomato, onion, lemon juice, chile peppers, tomato, garlic, salt, and pepper in a bowl; stir to combine.
- Keep in mind that everything can be adjusted to your liking. I recommend you add a bunch of chopped parsley if you have it, and a jalapeno pepper for extra spice.
