Chilean Alfajores

a tasty chicken stew with wonderful vegetables and aromatic spices served over whole-grain couscous. In reality, this chicken recipe won the competition! Depending on personal preference, vegetables and even meat can be changed, but in this dish, I think that lamb, squash, carrots, and bell peppers all work nicely. The flavors are delicate but fragrant even though the spices seem weird! a firm household favorite.

Ingredients

  1. 1 (14 ounce) can sweetened condensed milk
  2. 7 tablespoons unsalted butter, softened
  3. 7 tablespoons white sugar
  4. 1 large egg, beaten
  5. 7 tablespoons all-purpose flour

Instructions

  1. Place the entire, unopened can of condensed milk in a large saucepan. Fill the saucepan with water and bring to a boil. Lower heat to a simmer and cook until milk inside has caramelized, about 2 hours.
  2. Remove from the heat and set aside to cool while you make the cookies.
  3. Preheat the oven to 325 degrees F (165 degrees C).
  4. Beat butter and sugar together in a bowl with an electric mixer until creamy. Mix in egg, then mix in flour until well combined.
  5. Drop batter by small teaspoonfuls onto an ungreased cookie sheet. Dip your finger into flour, and pat each cookie into a very thin, little circle (about the size of a quarter).
  6. Bake in the preheated oven until just starting to brown around the edges and no longer doughy in the centers, 10 to 12 minutes. Cool on the cookie sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more.
  7. Sandwich cooled cookies together with the caramelized condensed milk.
  8. It makes a lot of cookies, and I ended up not even using all of the caramelized condensed milk.

Just reading this recipe I was a little bit suspicious of it but I figured I would try it anyway because I wanted to do the chilean take on Alfajores. Clearly this wasn’t it I’m not really sure what’s up with the ratios, but 7tbsp of flour and butter? You’re gonna want cornstarch if you want it to be like a shortbread cookie there was no specifications on whether or not you should refrigerate the Dell, so I just did everything as specified in the recipe, no matter what my personal opinion was. As I expected, the cookies totally melted and flattened out. The dough was really soft and not really workable.
