Ingredients
- 2 teaspoons chopped fresh rosemary
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon crushed red pepper flakes
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 racks lamb
- 2 tablespoons olive oil
- 2 tablespoons salted butter
Instructions
- Mix the rosemary, salt, pepper, red pepper flakes, garlic and lemon zest in a small bowl.
- Using a sharp knife, cut the racks of lamb into chops. Rub both sides of the chops with the seasoning mix.
- Add the olive oil and butter to a skillet over medium-high heat. Add the lamb, in batches if necessary, and cook for 2 to 3 minutes per side. Transfer to a platter and let rest for a few minutes before serving.
