Tuscan Soup with Tortellini

Ingredients

  1. 2 tablespoons canola oil
  2. 1 medium onion, chopped
  3. 2 teaspoons chopped garlic
  4. 1/2 teaspoon red pepper flakes
  5. One (14.5-ounce) can less sodium beef broth
  6. 3 cups water
  7. One (14.5-ounce) can diced tomatoes
  8. One (16-ounce) bag frozen Italian vegetable blend
  9. One (15-ounce) can cannellini beans, drained and rinsed
  10. 1 tablespoon Italian seasoning
  11. Salt and freshly ground black pepper
  12. One (16-ounce) bag frozen cheese tortellini
  13. Serving suggestion: Herb Focaccia

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a large pot, heat the oil over medium heat and add the onion, garlic, and red pepper flakes. Saute for 2 minutes, then add the beef broth and 3 cups of water. Add all of the remaining ingredients, except the tortellini. Bring to a boil, then reduce the heat and let simmer for 5 minutes. Add the tortellini and simmer until the tortellini are cooked, another 5 minutes. Season with salt and pepper, to taste. Ladle into serving bowls and serve with Herb Focaccia, if desired.

Super easy and delicious! I followed what others said and used all beef broth instead of adding water.

Quick, easy and delicious! Hit the spot on a cold day. Used all beef stock, sweet sausage and 1/8 tsp. of red pepper (I will use even less than that, if at all, next time because it was just a little too spicy). I also used the whole bag of tortellini because that’s what it called for. The whole bag just made it a fuller soup with less broth. As for the cost, I only paid $9.94 – hitting the $10 mark (which included the sausage). Didn’t include the oil, garlic, spices & red pepper in cost because I already had it) so I’m not quite sure where someone paid $20 for this meal. I will make this again for sure. Delicious!

I made this soup tonight because I had some left over tortellini and it is DELICIOUS! So fast and easy to make. I also added cut up meatballs I had left over to the soup for my husband is a meatlover. My only concern is the typo regarding preheating the oven for 375 hahaha but I guess accidents happen. Regardless, I give this recipe 5 stars as this is a Fantastic quick weeknight dinner 😮

This soup was absolutely delicious! I had to improvise on some of the ingredients because I couldn’t find them in the store, so I used can white beans instead of cannellini beans and I had to use a package of frozen tortellini in sauce with veggies, and I used a little more beef broth since some of the reviews were saying it was watery . It was amazing my family loved it even my 2 yr old who is picky about veggies. I took it to work the next day for my coworkers and they loved it, even asked for the recipe. Thank you so much for this, I will definitely make again.

I was so excited to try this soup. I followed the recipe as written except for the Italian seasoning. I just made a combination of rosemary, thyme, basil, and oregano. I was surprised by the amount of heat that the red pepper flakes gave the soup. It wasn’t too hot but nice and warming. The heat did increase the next day when I reheated the leftovers.

Both my husband and I enjoyed this soup. My husband’s only comment was that he found the broth to be a little too watery. I think the next time I make this I will just double the beef broth.
