Spaghetti with Chianti and Fava Beans

Ingredients

  1. Deselect All
  2. One 750-milliliter bottle Chianti wine
  3. Kosher salt
  4. 1 pound spaghetti
  5. 2 tablespoons olive oil
  6. 12 ounces spicy Italian sausage, casings removed
  7. 1 shallot, chopped
  8. 1 clove garlic, minced
  9. 1 cup freshly grated Parmesan
  10. 1/4 cup mascarpone, at room temperature
  11. 2 pounds fava beans, shelled, blanched and peeled
  12. 1 teaspoon chopped fresh rosemary

Instructions

  1. Add the wine, 8 cups water and a handful of salt to a pasta pot. Bring to a boil over high heat. Add the spaghetti and cook until just shy of al dente, about 8 minutes.
  2. While the pasta is cooking, heat a large skillet over medium-high heat. Add the oil and sausage to the hot pan. Cook, breaking up the sausage with the back of a wooden spoon, until almost fully cooked, about 4 minutes. Add the shallots and garlic, and cook an additional 2 minutes, stirring often. Using tongs or a pasta fork, remove the pasta directly to the sausage pan. Sprinkle with 3/4 cup of the Parmesan, and toss with tongs to combine. Add the mascarpone, fava beans, rosemary, 1/4 teaspoon salt and about 1 cup of the pasta water. Stir with a wooden spoon to combine, adding more pasta water as needed to form a sauce and coat the pasta. Serve sprinkled with the remaining 1/4 cup Parmesan.

I could not find any fava beans and do not prefer peas in my spaghetti, so I omitted them completely. I used bratwursts and seasoned the pork with fresh rosemary, thyme, and basil, garlic and peppers from my garden. This recipe is amazing. I could eat the whole pot in one sitting. Ok probably not, but I would try…

This was delicious. Johnsonville makes a limited edition red wine and cheese sausage which if you can find goes perfectly with this dish! I even said, had Giada known this sausage was a thing, she probably would have used it. The flavors were great and we halved the recipe making it perfect for 2 and giving each of us a glass of Chianti to sip with it. Did not take that long to come together either. Highly recommend!

This dish really took me right back to Italy! Will for sure make again. 
My husband and I made homemade pasta as we did this dinner as a date night in. But store bought would be just as good. I used 3/4 can of peas because canned fava beans (all my local store had) are brownish. Green peas really brighten up this dish. 
P.S. Don’t forget to buy 2 bottles of wine so you can sip while you cook!

This is delicious. All the ingredients blend together beautifully. The mascarpone adds a finishing creaminess that elevates this pasta to fine dining standards. I found it easy to follow directions. Would say it serves 4 as a main course. My only caveat? It looked rather “brown” so not too appealing. Was it because I used cheap chianti???!

Just made this! OMG….fantastic! Love love this and the pasta cooked in the chianti is so good. Reminds me of my time in Italy  and my childhood with all these fantastic dishes.

AMAZING!! The pasta has so much flavor from the wine. I substituted turkey sausage instead of the pork. My son and husband loved iit. Giada never disappoints!
